Raw Vegan Soft Serve Mint Chocolate Chip Ice Cream

  • 4 frozen bananas chopped into slices
  • 8 mint leaves chopped finely
  • 1 Tbsp fresh spinach juice (optional - for colour only)
  • 1 Tbsp raw agave (optional to round out the flavours)
  • The seeds of 1 vanilla bean scraped out
  • 1/2 tsp non alcoholic natural vanilla extract
  • 1/2 tsp non alcoholic natural peppermint extract
  • pinch of Celtic sea salt or Himalayan salt
  • 1/8 cup raw cacao nibs
  1. Place all of the ingredients except the cacao nibs in your high speed blender (I use a Vitamix).
  2. Use the tamper to guide the bananas through the blades until just combined.
  3. You will hear the sound of the machine change as four mounds form.
  4. Stop the machine as soon as this happens or the friction heat of the blades will melt the ice cream too much.
  5. Stir through the raw cacao nibs.
  6. Serve immediately topped with fresh mint leaves. 
  7. Presto! Instant raw vegan healthy ice cream. YUMMO! 
  8. Serves 4.

To ensure you always have a stash of frozen ripe bananas for your smoothies, muffins and breads, never throw away ripe bananas. Just keep freezing them whole in their skins in a ziplock bag. The riper they are (not soft and mushy) the sweeter they are - meaning you will need little or no sweetener! You can keep adding to the bag. Then when you need them, take the desired amount out of the bag and then rinse and cut for delectable frozen treats. I buy a bunch of bananas every week that I let ripen on the bench top and then freeze for use later. Bananayumma!
