Raw Vegan Sugar Free 5 Minute Raspberry Jam

  • 2 cups fresh raspberries
  • 1/2 cup chopped fresh pitted dates
  • 1/4 cup coconut water
  • 2 Tbsp chia seeds
  1. Place the coconut water in the bottom of your high speed blender (I use a Vitamix) and then throw in the dates.
  2. Blend on high until the dates have broken up - about 10 seconds.
  3. Place the chia seeds and 1 cup of the raspberries into the blender and pulse on LOW just a few times to JUST break up the raspberries.
  4. If you blend on high you will get the consistency of a pudding and not the beautiful seedy, chunky look of jam.
  5. Now add in the second cup of raspberries and pulse just a couple of times to break them up.
  6. Place this mixture in a glass container and cover in the fridge for about 30 minutes. 
  7. This will allow the chia seeds to thicken the jam and will give the flavours time to infuse. 
  8. Serve with your favourite crackers, bread, fruits, pancakes and crepes. YUMMO!
  9. Make 2 cups
  10. *This will keep in the fridge for about 3-4 days.

How to prevent sticking when chopping dried fruits

Chopping dried fruits such as dates, apricots and raisins can be a sticky mess. The fruit sticks to the knife, the board and your fingers. To get yourself out of a sticky situation just rub a tiny drop of cold pressed oil onto the blade of your knife. The fruit will slide right off after cutting.
