She nurtured me back to good health with love, understanding, compassion, and infinite wisdom. She, along with her assistants Sharon and Lois have been guiding lights and wonderful friends to me. I am grateful every day for their wisdom, insight and generosity of spirit. Dr Carter is a proponent of raw foods, green smoothies and the Body Ecology Diet, and helped me conquer my Epstein Barr Virus, candida and overall lethargy. I am so grateful she is my doctor. I have never felt better, and owe so much of my good health to her!
Elaine, Lois, Sharon and I have so much fun cooking together, sharing stories and delicious vegetarian recipes. As a passionate vegetarian food blogger I am constantly inspired by their passion for whole foods and natural remedies. These women all have such a wonderful flair for flavours and a genuine love of good raw vegan food. So it was fabulous that we could all cook a vegan feast together and host the first of Dr Carter’s “Lunch and Lecture” series held at her office every second Thursday.
For our first organic gluten free vegetarian lunch we made my vegan cream of spinach soup, raw red cabbage salad and raw banana cashew ice cream. We got a resounding vote of confidence from our twenty diners and are inspired with confidence for the next event. Those of you living in Springfield, Missouri or the surrounding areas, you are so lucky to have Dr Elaine Carter!
