It is DAY 28 of "Gluten Free Vegan Recipes with Breville" and I am tickled pink to be featuring the stunningly gorgeous and hilarious Dreena Burton, Canadian Goddess, and wildly successful Vegan Chef, Best-Selling Cookbook Author, Award-Winning Recipe Developer, and Blogger Extraordinaire at Plant Powered Kitchen. I have admired Dreena and her AMAZING recipes for years, and was thrilled when the always generous JL Goes Vegan introduced us. We have since exchanged quite a few entertaining emails, and my Dreemy Crush has now developed into a full blown obsession! This sweet, humble, super talented woman and her recipes ROCK! So, come on a ride with me and fall in love with the captivating Dreena Burton. 

Dreena has been a vegan for almost 20 years, and with more than 15 years of recipe development experience has written four bestselling vegan cookbooks charting her journey as a plant-powered cook and at-home mother of three gorgeous girls. Passionate about creating nutritious recipes, she is well known for “making healthy taste delicious!” She is an advocate of using whole foods and the "vegan basics" -- beans, nuts, seeds, whole-grains, fruits and vegetables to create healthy, delicious food for the whole family. 

Dreena has written for VegNews and Alive magazines, True/Slant, and has been featured in other publications such as First magazine. She has won several blog awards including VegNews VegBloggy, and Vancouver’s Ultimate Mom Blog. Her “Homestyle Chocolate Chip Cookies” has become a signature recipe, and its YouTube cooking video has received over 225,000 views, and Dreena’s “Frosted B-raw-nies” recipe won the Everyday Health Gluten-Free Recipe Contest in 2011.

Having been vegan since 1995, when there were fewer books written about the subject, Dreena’s first project in 2001, THE EVERYDAY VEGAN, was prompted by her father-in-law’s heart attack, where she wanted to share valuable information about plant-based living. After having her first child, she wrote VIVA LE VEGAN!, which represented her journey as a mother, and featured wholesome, easy family vegan recipes. Her third celebratory cookbook, EAT, DRINK & BE VEGAN, with its inventive flavour combinations and inclusion of gluten-free recipes, became very popular for its entire chapter on hummus!

Released in May this year, Dreena’s latest book, LET THEM EAT VEGAN: 200 Deliciously Satisfying Plant-Powered Recipes for the Whole Family (2012), represents an evolution in vegan cooking. The thing I love the most about this book is that Dreena uses whole foods -- beans, nuts, seeds, whole-grains, vegetables, fruits and natural sweeteners to create delicious, nutrient-dense vegan meals, snacks and treats everybody can enjoy. What I love about this book is that no white flour, white sugar or vegan substitutes like cream cheese, sour cream or vegan meat are used in any of the recipes! All of the recipes are wheat-free and mostly gluten-free, and there are quite a few raw dishes included as well. Dreena's mouth-watering recipes cover just about every category you could want!

There are entire chapters devoted to: Breakfast Bites, Smoothies

s and a final chapter devoted to Ice cream! Some of my favourite recipes include: Anise-and Coriander-Infused Orange Lentil Soup, Too-Good-to-Be-Tofu Burgers, Apple Spice Hemp Pancakes, Winter Pot Pies, Truffled Cashew Cheese, Cocoa Cookie Dough Balls, Raspberry Almond Torte, Raw Lemon-Lime Cheesecake, Salted Chocolate Cream Cheese Brownies, Peanut Butter Chai Ice Cream, and these delicious Nutty Bean Burgers she is sharing today!

Deena says, "I came up with these burgers after having a chat one day with my good girlfriend, Vicki, about how our kids are fussy with veggie burgers.  Many recipes (mine included) are too savoury for them, or have onions and other veggies that they feel the need to pick out.  Also, sometimes the patties are too delicate for kids eating them on a hamburger bun. I got to work, and made this recipe which is very nutritious and delicious without being too heavy in herbs or spices.  And yes, you can serve it up with confidence on a burger bun!" I say, they are sensational and are not to be missed!

LET THEM EAT VEGAN also includes a Glossary of Kitchen Tools and Ingredients with a pantry section that suggests what you might want to stock up on, and why; and informative chapters on How to Prepare Different Greens and Grains, Raising Vegan Children (feeding toddlers, packing school lunches), and more.

As the mother of three young girls, Burton finds an entertaining balance between nutrition, taste and FUN! With her wonderful sense of humour, all of the recipes have witty names such as “Warm 'Vegveeta' Cheese Sauce”, or chapter titles such as “Good Pasta Belongs on a Plate - Not the Wall!” LOL! All of the recipes give you the “411 on ingredients” and have a lovely “if Aprons Could Talk” closer with tips and modification suggestions from her own personal experience.

This charming book with gorgeous food photography from the beautiful Hannah Kaminsky is fantastic for beginner vegans and experienced plant-based cooks alike, because the recipes are super easy, but inventive and full of flavour. It is also a MUST BUY for busy parents, as SO many of the recipes are GREAT for kids. I cannot recommend this book more highly. The recipes are AMAZING!

Dreena Burton’s Gluten Free Vegan Nutty Veggie Burgers

  • 1 ½ cups raw almonds
  • 1/2 cup raw walnuts
  • ½ cup raw pecans (or more walnuts)
  • 1 small clove garlic, cut in quarters
  • ½ tsp Celtic sea salt or Himalayan salt
  • 1 Tbsp ketchup or tomato paste
  • 2 Tbsp nutritional yeast
  • 1 Tbsp wheat free tamari
  • 1/4 tsp poultry seasoning or 1/8 tsp each of dried thyme and ground sage
  • ½ cup finely grated carrot, packed
  • ½ cup finely grated zucchini, packed
  • ½ - 1 cup gluten free rolled oats
  • smidgen olive oil (for pan-frying)
  1. In your Sous Chef® food processor, add almonds, walnuts, pecans, garlic and salt. Puree until the nuts are finely ground. 
  2. Then add ketchup, nutritional yeast, tamari, poultry seasoning (or thyme/sage), carrot and zucchini, and pulse through until the mixture becomes dense and is starting to hold together. Then pulse in the oats. 
  3. Remove the blade, and shape into patties. 
  4. To cook, add a smidgen of oil to a non-stick skillet over medium heat. Cook patties, about 5-7 minutes on first side, and then another 3-5 minutes on second side until golden brown. 
  5. Serve with lettuce, tomatoes and fixings of choice (and try “Almonnaise” as an alternative to vegan mayonnaise).
  6. Ingredients 411:  Using ½ cup of oats will firm the patties up nicely enough, and you can use up to 1 full cup of oats for even firmer patties.
  7. If This Apron Could Talk:  If you’d like to make this into a loaf, it works pretty well.  Press into a lightly oiled and lined (with a strip of parchment, for easy removal) loaf pan.  Cover with foil and bake at 375 degrees for 25 minutes, uncovering for the last 5-10 minutes just to lightly brown the top. Let cool for 5-10 minutes in the pan, and then use the parchment to lift the loaf out of the pan to slice. 
  8. Makes 5-6 patties.

Tip: selecting the best raw walnuts

Raw unshelled walnuts are widely available in pre-packaged bags as well as bulk bins. Always purchase from a supplier where there is a high turnover to ensure freshness and quality. Look for walnuts that are uniform in colour. Avoid the limp and shrivelled ones. Walnuts should smell nutty and sweet. If they smell musty or rancid they are bad. Walnuts are extremely susceptible to rancidity due to their high polyunsaturated fat content. To preserve the precious oils, store walnuts in a sealed glass jar in the fridge for up to six months. Always soak walnuts before using to remove the enzyme inhibitors and make them more digestible.

I went to order the “Let Them Eat Vegan” cookbook directly through your site (because I’m guessing you get at least a little commission from that), but it doesn’t include the ebook version. =( Do you plan on adding that to your site so that Kindle addicts like me who have run out of shelf room (and floor, and windowsill, and…) can order without having to bypass you completely and go through Amazon? I’d love to make sure you got the fruits of your labor since it was this recipe that brought me to your site and, ultimately, to the book. =)
