Homemade Pineapple Ginger Jam Spread

I must admit that I have never made homemade pineapple jam (jelly) in my life. I grew up watching my grandmother, mother, aunts and friends make it. But not being a sticky sugar lover, I was not all that interested in perfecting the art of boiling up just as much refined sugar as fruit! Oh, the thought of it just makes my colon start convulsing! 

I was never a fan of jam/jelly. I don’t think I have ever had it on toast, and was never partial to having it smeared in the centre of cakes and cookies either. I know this revelation is baffling to those of you who crave a great preserve smothered on a piece of crusty piece of bread, with a steaming cup of tea and coffee in the morning. But there you have it.

I watched my friend Kris make homemade apricot jam yesterday, as I happily gossiped with her, perched on her kitchen bench. Her neighbours had kindly given her a year’s supply of fresh apricots from their garden; and after gorging themselves silly on fresh ripe apricots, she set about making "all things apricot", so they could hibernate for the Winter! I always enjoy watching Kris cook. She is so knowledgable about whole foods and cooking, and her vegetarian food is absolutely delicious. I have happily stolen many a show stopping recipe from her over the years we have known each other, and I know there will plenty more where those came from. After escaping a sugary jam-induced coma, I went home inspired to find a quick and easy fruit spread that we could all blend up and enjoy on a crusty piece of gluten free bread in under 5 minutes. I remembered this simple vegan recipe I made from the Living Cleansing Diet years ago for a Sunday brunch, and looked no further. I have modified it slightly, but the credit goes to Dr Cabot, and the team from the Liver Cleansing Kitchen. This quick easy pineapple spread is vegan, gluten free, dairy free, egg free, nut free, soy free and refined sugar free. Home Made Pineapple Spread

Homemade Pineapple Ginger Jam Spread

  • 1 cup very ripe fresh pineapple or unsweetened tinned pineapple drained
  • 1 tsp minced ginger or more to taste
  • 1 Tbsp coconut sugar or more to taste
  • 1 tiny pinch of Celtic sea salt or Himalayan salt
  1. Puree on low in your blender (I use a Vitamix) until well combined but still rustic in consistency.
  2. Will keep in a sealed glass jar for about a week. But it won’t ever last that long.

Makes 1 cup

the best way to clean your blender

After blending up something sticky, gooey or smelly, just place a few drops of soap in the carriage with some warm water and blend on high until all of the congealed food slips away from the blades and sides. Then repeat this process. Then rinse with water and presto! Clean carriage. 
If you have smells or stains repeat this process with some bicarbonate of soda or lemon juice and water.
