It is DAY 31 of "Gluten Free Vegan Recipes with Breville" and we celebrate the final day of our Breville Sous Chef® Food Processor Giveaway party with one of the most famous vegans in the world -- the super talented and HILARIOUS Ellen Degeneres, host of The Ellen Show. Ellen gave me permission to share her Easy Vegan Tofu Ceviche to close this event, and I was thrilled! This recipe is super quick and easy, and is bursting with fresh live enzymes and simple zesty flavours. 

The wildly popular Ellen Show celebrates it's 10th Season this year. Since debuting in 2003, the show has won 32 Daytime Emmy Awards, including four for Outstanding Talk Show; two awards for Outstanding Talk Show—Entertainment; and in many writing and technical categories. The program also won Best Talk Show at the 2009 Genesis Awards. DeGeneres herself has won for Outstanding Talk Show Host an amazing four times in a row, from 2005, 2006, 2007 to 2008. 

DeGeneres went vegan in late 2008 after reading books like DIET FOR A NEW AMERICA and watching the documentaries EARTHLINGS and MEET YOUR MEAT. She has been a strong advocate for vegan living ever since. She came under attack in some vegan circles for signing on as the Cover Girl spokeswoman, considering their unpopular animal testing policies, but I like to think Ellen is trying to effect change from the inside out, and will use her hefty paycheck to help spread the word about conscious business practices. 

Committed to flying the vegan flag, Ellen launched the fabulous Going Vegan with Ellen in 2011, a website/blog with a portal from The Ellen Show website dedicated to the ethics and benefits of her plant-based lifestyle. With a view of raising awareness about veganism, the site has a Why Go Vegan and Getting Started section, as well as Vegan Living Tips, Vegan Resources, and the animal loving Gentle Barn series that are all FANTASTIC resources for learning about compassionate living.

There is also a list of other vegan celebrities on the site to get you inspired. Portia De Rossi, Bill Clinton, Joaquin PhoenixCarrie Underwood, Woody Harrelson, Alanis Morissette, KD Lang, Alec Baldwin, Alicia Silverstone, Tobey MaguireOlivia WildeBryan Adams, Carrie Anne Moss, Emily Deschanel, Jared Leto and Ed Begley Jr are all featured. 

Ellen also shares fabulous vegan recipes! With contributions from famous chefs like Tal Ronnen, who catered Ellen's wedding, to Kathy Freston, Bethenny Frankel and all kinds of viewers, there are tons of delectable delights to enjoy. From Veggie Stir-Fries, Mexican Chili, and Quick Mushroom Gravy to Chocolate Raspberry Mousse Pie and Holiday Spice Cupcakes, there is something for all occasions. Ricki Heller's Raw Cocoa Nibbles are featured on the site too! WOO HOO! 

As a celebrated Actress, Comedian, Television Host, Spokesperson, Charity Warrior, and Proud Vegan, Ellen uses her celebrity status to raise awareness about animal rights issues and other social causes. For example, DeGeneres served as campaign ambassador to Farm Sanctuary's Adopt-A-Turkey Project in 2010, asking people to start "a new tradition by adopting a turkey instead of eating one" at Thanksgiving. In 2011, DeGeneres headlined the third annual “Change Begins Within” gala for the David Lynch Foundation; and in November 2011, Secretary of State Hillary Clinton named her a Special Envoy for Global AIDS Awareness. Ellen has now won thirteen Emmys and numerous other awards for her work and charitable efforts. 

In 2012, Halo, a healthy pet food company co-owned by Degeneres, released a Vegan Garden Medley for Dogs -- a plant based blend of proteins and vitamins, without the unhealthy preservatives and factory farm meats found in other brands. Ellen continues to be involved in healthy, eco-friendly, and cruelty-free projects and initiatives. 

Word is that Ellen and Portia have partnered with singer Chrissie Hynde and producer Steve Bing to open a vegan restaurant in Los Angeles, California. The menu was set to be designed by chef Tal Ronnen, who also catered their wedding, yet I think this has all been put on hold. Hopefully the project will find its legs again, and we will have another fabulous vegan joint to enjoy! 

Until then, try this delicious tofu ceviche. It takes less than ten minutes to make, and is scrumptious!

Ellen Degeneres’ Easy Peasy Tofu Ceviche

  • 1 cup cubed Tofu (firm/extra firm/super firm)
  • 1/2 cup celery (about 1 large rib)
  • 1 cup diced tomato (about 1 large)
  • 1 cup fresh mango (about 1 medium)
  • 1 cup cubed avocado (1 avocado)
  • 2 Tbsp finely chopped red onion
  • 2 Tbsp chopped fresh cilantro
  • 3 - 4 Tbsp fresh lime juice
  • 1/2 tsp Celtic sea salt or Himalayan salt
  1. Dice tofu into very small pieces.
  2. Likewise, dice celery, tomato, mango, avocado, onion, and cilantro into same size pieces. (I used the Sous Chef® food processor for the onions and cilantro.)
  3. Gently combine in bowl and toss with a little lime juice, and salt to taste. I started with 1/4 tsp salt and keep adding to taste. 
  4. Keep refrigerated. This mixture is even better after it marinates together for a bit.
  5. Eat as you would a salsa -- dipping with blue corn tortilla chips or pita chips. I dare you not to eat the whole bowl in one sitting!
  6. I served like Ellen did on the website, in martini glasses and it was a huge hit.

Tip: freeze fresh lime juice in ice cube trays for later

Fresh limes can be really expensive when they are not in season. To ensure you always have a stash of fresh lime juice, freeze juice in ice cube trays and defrost them as you need them for recipes. These ice cubes also make fantastic additions to flavour water, mocktails and smoothies.

This does sound—and LOOK—delicious! And of course we all love Ellen and The Ellen Show (and thanks so much for mentioning my Cocoa Nibbles, Tess!) :D Thrilled to see this recipe here, and thanks for all the incredible info about such an incredible woman. :)

Oh, I do so love the pink, but I love this particular shade of green too! It’s such an inviting shade! It actually works really well as I took another look at tabs that I’d become accustomed to because they’re now in a different color. :-))

We made this today and it was really yummy. We used the sprouted tofu from Trader Joes and we defrosted the TJ’s frozen mango. It turned out great. Thanks. I didn’t know there were recipes on the Ellen site. I am going to try some more.

I love Ellen too!  Just whipped this up for the family, swapping the red onion for corn.  It was a winner.

I’m not a big fan of tofu, but when Tess asks for Piggy Taste Testing, I’m there with my fork ready.  And as usual, I wasn’t disappointed.  The ingredients blended together so perfectly, especially the mango and avocado.  Yay for Ellen for sharing… I’m definitely making this again!

SO glad you expanded your horizons and gave this a go. Tofu can be SO incredible as it takes on the flavours of whatever you put it with. This recipe is a winner, and you can make it with all kinds of fruits.

Chris is a HUGE Ellen fan. He says it makes his day and loves how fun, positive and sweet she is. He watches her show every day.  :)
