Vegan Ginger Soy Marinade
1Today I continue my crusade against commercially produced salad dressings and marinades. I don’t know anyone who doesn’t like a good ginger soy marinade, and this vegan marinade is dead easy. I did think twice before posting this quick and easy recipe, as I thought it was too basic even for THIS recipe blog! But then I remembered my many conversations at work, with people who have never made their own home made salad dressings and need a helping hand. I thought there might be more of you out there, and so here I am posting this basic vegan marinade for your enjoyment.
I have deliberately kept this ginger soy marinade really basic, as I think it stands alone. But feel free to be bold and jazz it up. This quick, easy vegan marinade can be blended up in minutes, and works really well on veggies and tofu kebabs. I am a bit more heavy handed on the ginger than I have specified. You know how I feel about ginger -- you can never have enough.
I marinated some tofu for my fellow gluten free foodies, Jad and Melinda the other night. We had a blast, and all thought this ginger soy marinade was a winner. We were all happy little snouts. Although, I think if you ask them about the other night, all they will remember is the raw vegan ice creams we sampled. Yes, I will simply wet your appetite for a future recipe blog. I promise I will post the vegan ice cream recipes soon.
But, for the time being, give this ginger soy marinade a go while you are waiting. This recipe is vegetarian, vegan gluten free, dairy free, egg free and nut free. It is super easy and piggilicious.

Piggy Cooking Tips
the best way to grate fresh ginger
Nothing beats a porcelain ginger grater! Just rub the whole ginger piece unpeeled over the grater and you have it ready in literally seconds, Procelain ginger graters are as cheap and chips and so easy to clean. Just place the whole grater under running water and everything runs off. That little piece of kitchen gadget mastery would be in my top ten favourite cooking tools. I have had mine for years and travel everywhere with it. Thankyou Tony!

Yes there were no complaints from Jad and myself when Blender Girl brought this around for dinner… we couldn’t believe our luck…so fresh and fragrant… and delicately balanced flavor ...perfect for those summer evenings. :)
