I thought I would continue my condiment craze and offer up this glorious green mayonnaise as an interesting colourful alternative to more traditional white mayonnaise options. I don’t know about you, but I like to add a bit of colour to the table; and in my humble opinion, nothing looks better than green mayonnaise! If you are looking for a quick easy colourful dairy free mayonnaise this one is a winner. 

This glorious green mayonnaise is a wonderful spread on vegetable kebabs, fantastic with tacos, and great with steamed vegetables, salads and sandwiches. Not only does it taste fantastic, but it is a great way to blend in some much needed greens and give this mayonnaise a nutritional kick. For me, spinach is always a good idea!

The only thing about fresh raw greens is that they can get a bit bitter if not balanced. Make sure you blend and taste, and adjust the mustard, lemon juice, oil and salt accordingly. This dairy free mayonnaise really needs to be eaten the day it is made otherwise the greens can go a bit sour making it not as palatable. Blend and serve and you can’t go wrong. Green Home Made Dairy Free Mayonnaise

Glorious Green Dairy Free Blender Mayonnaise

  • 3/4 cup cold pressed extra virgin olive oil
  • 1 organic egg
  • 1 Tbsp lemon juice
  • 1 tsp dijon mustard
  • 1/4 cup freshly chopped continental parsley
  • 1/2 cup fresh baby spinach leaves
  • 1/4 cup fresh basil
  • pinch of Celtic sea salt or Himalayan salt
  • freshly ground black pepper to taste
  1. Place egg, lemon juice and mustard in your blender (I use a Vitamix) and puree until well combined.
  2. With the blender still running slowly pour in the oil in a steady stream until the mixture emulsifies.
  3. Add in the herbs and spinach until thick and creamy.

If the mixture gets too thick, add in some more olive oil or a little bit of cold filtered water. Season to taste and serve immediately or on the same day. Go Green!

Makes about 1 1/2 cups.

Piggy Cooking Tips

the best way to clean your blender

After blending up something sticky, gooey or smelly, just place a few drops of soap in the carriage with some warm water and blend on high until all of the congealed food slips away from the blades and sides. Then repeat this process. Then rinse with water and presto! Clean carriage. 
If you have smells or stains repeat this process with some bicarbonate of soda or lemon juice and water.
