Gluten Free Chocolate Prune Cake

The Persian Omelette recipe was so fantastic, that I decided to adapt another easy healthy recipe from my Healing Foods book, and this Chocolate Prune Cake is worthy of a mention. This gluten-free chocolate cake recipe is beautifully moist, and has a rich dark colour. Not to mention, a fabulous taste. I have always been partial to gluten free cakes that are naturally fruit sweetened. I don’t know about you, but my palate doesn’t like to be overwhelmed with sweet notes. When it comes to sugar, natural or otherwise, less is more. That is why this natural prune-sweetened cake hits a sweet spot in me. Hopefully it will in you too.

Now I have to be honest, after working as a carer for over 20 years, where the ubiquitous prune takes pride of place in the breakfast bowl of every aging patient (in the hopes of maintaining digestive regularity) I have not been overly enthusiastic to use them in my recipes at home!

Some time ago, I got to the point that if I ever laid eyes on another prune again, I would have been close to sticking needles in my eyes! Well, perhaps I am overstating my overdose symptoms just a tad. But I could not look at a prune without immediately picturing the bowel movement of one of my patients! Suffice it to say, I was not championing the plight of the prune in my personal life. However, “the times they are a changing”, and I am stoking the flames of my “passion for the prune”, thanks to this trusty little chocolate prune cake. I must admit, I was first drawn to this gluten-free chocolate cake recipe when I noticed that they had used coconut milk. You know me, anything with coconut and I am on board! But it is the prunes, coupled with the chocolate, that are the stars of this gluten free cake.

Prunes are one of the most antioxidant-rich foods on the planet. I am well acquainted with the little prune’s talent for moving food along the colon! But I had forgotten about the part that the prune plays in maintaining the healthy balance of friendly bacteria in the large intestine. But aside from all of that, they are absolutely delicious, and they certainly sweeten the deal with this gluten-free chocolate cake recipe. This quick easy cake is also dairy free, nut free and soy free. If you are looking for super easy mixer recipes this is a winner. I just threw everything into my Kitchen Aid stand mixer!

You could use any dark chocolate that tickles your fancy or fits into your budget. I have used Lindt 70% Cocoa Chocolate, Green and Black’s, Dagoba organic dark chocolate, and Loving Earth raw vegan chocolate which is sweetened with agave. They all work really well in this recipe. This chocolate prune cake is pretty much fool-proof. It is dead easy. Mum and I thought it was absolutely delicious. But Kara and Leigh found it a little grainy. I thought I would mention that for those of you “gluten-free chocolate cake aficionados”.

But it moved things along for me! I am a fan of prunes again. YUMMO!

Gluten Free Sugar Free Chocolate Prune Cake

Gluten Free Chocolate Prune Cake

  • 1/2 cup white rice flour
  • 1/2 cup brown rice flour
  • 1/2 cup potato flour
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1/2 tsp gluten free baking powder
  • 1 tsp xanthan
  • 3 eggs beaten
  • 1/2 cup organic coconut milk
  • 300gm/11oz dark chocolate
  • 2/3 cup organic butter 155gm
  • 1 cup pitted prunes chopped
  1. Preheat oven to 180C/350F. Grease a 20cm/8inch round tin.
  2. Melt the chocolate and allow to cool slightly.
  3. Mix the butter and prunes in a food processor, and transfer to a mixer.
  4. Slowly add in the melted chocolate into the mixture.
  5. Then add in each egg individually, alternating with some flour and baking powder.
  6. Slowly pour in the coconut milk, and mix until well combined.
  7. This mixture will yield a very stiff batter.
  8. Spoon into a well greased tin, and bake for about 30 minutes until firm to the touch.

This is a very moist cake so it is best to totally cool before cutting.

Then it cuts beautifully and creates gorgeous uniform slices.

Easily Remove Cakes from tins

If you leave a cake too long in a greased tin, it can be difficult to remove. A really easy way to ensure a cake slides right out of a greased tin is to run the bottom of the tin over a very low flame on the stove top. This will melt the fat that was used to initially grease the tin and the cake will slide right out.

this cake looks lovely i love prunes myself, and the cake looks fudgy, can a topping be added if necessary ?

Hey Lucy! The cake isn’t that fudgy - the prunes throughout the cake are probably making it look that way in the photo. But yes - you would always add a topping like a chocolate frosting or cream. YUMMO!
