Today I am posting a fantastic healthy vegan berry beet smoothie recipe from one of my favourite blogs, Diet, Dessert and Dogs. Those of you who are not familiar with the incredible Ricki Hellier, get acquainted! She is absolutely amazing! I have been admiring Ricki for a long time. Ricki is a whole foods chef, educator, and author of the Canadian bestseller Sweet Freedom: Desserts You’ll Love without Wheat, Eggs, Dairy or Refined Sugar (one of only three cookbooks recommended on Ellen DeGeneres’ website) as well as three wonderful e-cookbooks. Ricki is incredibly knowlegable about anti-candida recipes and so many other things. Check out her books and her blog. She ROCKS!

Anyway, back to the recipe of the day. This was the very first recipe posted on The Balanced Platter and I want to celebrate it here today!
Vitamix Recipe #19: Vegan Brilliantly Berry Beet Smoothie from Ricki Hellier. I had never used cooked beets in a smoothie before. I normally use raw beets. But after tasting this smoothie, "I'm gonna be doin it a WHOLE lot more!" This smoothie is absolutely delicious. All of the ingredients come together in just the right amounts for a sweet decadent healthy treat.
Ricki called this a "New Year's Detox Smoothie" in her post, and credited the powerhouse beeroot as the magic ingredient. As she said, beets help tone the liver, and are full of antioxidants, soluble fiber, folate, potassium, vitamin C and tons of other essential nutrients. Other magic powerhouse ingredients include kale, which contains chlorophyll, a potent detoxifier, and cucumber, which is highly alkalizing. This smoothie has a gorgeous rich vibrant purple hue and is a wonderful allergy-friendly smoothie for the whole family. It tastes like a treat! It is gluten free, dairy free, egg free, nut free and soy free. I used Growing Naturals Vanilla Blast Rice Protein Powder, but you could use any protein powder you have. I am just a fan of Growing Naturals because it is vegan, non-gmo, gluten free, raw, and sprouted.
Trust me, give this vegan brilliantly berry beet smoothie a go and you will delighted. It is pretty had to "beet!" Thanks Ricki. You are "s'blended"!

Healthy Vegan Brilliantly Berry Beet Smoothie
- 1 medium beet, baked until soft at about 180 / 350, peeled and cut in chunks
- 1 cup mixed berries fresh or frozen (blackberries, blueberries, raspberries and strawberries)
- 3 large or 4 medium purple kale leaves
- 1/2 medium cucumber, peeled and cut in chunks
- 1 Tbsp fresh lime juice (about 1/2 lime)
- 1 scoop of plain or vanilla protein powder (I used Growing Naturals)
- 1 cup rice milk
- 5-10 drops liquid stevia or 1 packet of dry stevia
- Place all of the ingredients in a high-speed blender (I use a Vitamix) and blend until smooth.
- Note: if you use fresh berries, you might want to add 1-2 ice cubes for a cold smoothie.
- Drink immediately for the best flavour and texture.
- Makes 1 large 16-oz glass or two small glasses. YUMMO!

Piggy Cooking Tips
here’s a great way to clean beet stains
Beets are delicious! But they can be messy to work with and stain everything they touch including hands, cutting boards and bench tops. I always use gloves to handle beets so I don’t spread the juices to everything else in my kitchen. To remove the beet juice from cutting boards and bench tops just sprinkle the surface with some salt. This helps to lift the residue. Leave it sit for a while and then rinse and scrub with soap and water.
You can’t beet that!
