I want everybody to know about the glorious Kibby Miller, and her incredibly informative blog, Kibby's Blended Life. For a new blog that only started last year, Kibby is off to a FLYING start. This site is PACKED full of AMAZING information. I can't recommend it more highly. Some of you may remember Kibby being featured as my April 2012 Pig Of The Month

Definitely check out her inspiring story of wellness. Kibby is a landscaper by trade, but since being featured last year, she has found her real passion blogging and sharing about health, wellness, inspiration, green living, organic gardening, green smoothies and plant based recipes made with organic whole foods. She is now happiest spending time in her kitchen creating healthy vegan recipes for herself and hubby, Scott, and posting them on her new website and You Tube channel

Check out her fabuous recipes and videos. She has a gorgeous, down-to-earth quality and accessibility. She is also extremely knowlegable. Some of my favourite videos include: almond milk kefir, sprouting 101, Onion Quinoa Socca, How To Harvest Aloe Vera Gel, and so many more.

Kibby just wants to share her ideas and inspire others to take their health and wellness into their own hands and have fun! She is doing so in spectacular fashion! Kibby lives in North GA with Scott, and their 3 dogs, and lovely cat.

Kibby is currently writing a lifestyle/food journal that will assist people with finding balance in their lives with a mind/body connection. The book will be available in several months. I can't wait for that!

Kibby Miller’s “Key Lime Pie”

  • 1 bunch of broccoli stalk and florets included
  • 2 organic apples
  • 2 peeled lemons 
  • 1/2 small zucchini
  • 1 heart of romaine lettuce (or handful of romaine lettuce leaves or spinach leaves)
  • 3 stalks of celery
  1. Process all ingredients through your juicer (I use an Omega).
  2. Serves 1 - 2.
  3. Consume strained or unstrained. Whatever your preference.

Tips!

don’t waste those broccoli stalks

Have you ever been asked the question “Do you eat the heads of the broccoli or the stalks”? My answer – both! Most people prefer the heads. But the stalks are really tasty and useful too. If a recipe calls for only the heads of the broccoli don’t throw away the precious stalks! They are loaded with nutrients and really tasty. My favourite way to use the stalks is to grate or julienne the stalks to make broccoli slaw. Toss with some olive oil, lemon juice, salt and garlic and you have a quick raw salad that is bursting with green power!

I cannot WAIT to try this. You have so many delicious sounding recipes that I just plain don’t know where to start! I love getting this daily dose of inspiration!!! :)

I was intrigued by the name of this juice but it is curious that you call for lemons, not limes. Is that intentional?

Hi Renee, Yes, it is intentional.  It TASTES like a key lime pie.  I’m sure you could substitute with a lime and it would be just as fabulous.  Give it a try and let us know.  Hope you enjoy it - it is my FAVORITE!
