It is DAY 22 of "Raw Food Recipes with Excalibur" and I am thrilled to be featuring the incredible Matt Amsden from Euphoria Loves Rawvolution and Rawvolution. I absolutely love Matt's books, RAWVOLUTION and THE RAWVOLUTION CONTINUES and eat at his fabulous restaurant in Santa Monica almost every week. The buddha bites, sea dragon roll, and spirulina warrior shake make me swoon! I am in NYC for the rest of the year, and am becoming a frequent visitor at the East Village location. 

If you are not in L.A or NYC, Matt's book RAWVOLUTION has tons of SUPER EASY raw food recipes you can sample. I love the cactus salad, spirulina pie, raw pizza, and the signature "Big Matt with Cheese." The raw food recipes are organized by type, level of difficulty, and kitchen equipment requirements. There is also a ton of information about the benefits of raw food for newbies. Matt shares his personal story and offers advice and encouragement for adopting a raw foods lifestyle. 

Matt is sharing his famous onion bread with us today. This is a delicious, soft flat bread that you won’t believe is made using only five simple ingredients. Onion Bread is a very popular recipe in raw food circles. Google "Raw Onion Bread" and you will get many, many results for variations on the theme, but Matt Amsden invented the original Raw Onion Bread in Santa Monica, California in 2002.

So who is Matt Amsden?

Matt Amsden has quickly established himself as one of the premier raw food chefs in the world. Matt's company, RAWvolution, is the first of its kind, delivering gourmet raw food meals throughout the United States. Originally from Ontario, Canada, Matt was inspired to embrace a raw foods lifestyle after listening to an interview with David Wolfe on the Howard Stern Show. Matt moved to California, the heart of the raw food movement, to learn more about raw foods, and was soon catering to celebrities such as Margaret Cho, Woody Harrelson, Courtney Love, and Alicia Silverstone.

Matt Amsden & Euphoria Loves Rawvolution’s Famous Raw Vegan Onion Bread Crisps

  • 1 large yellow onion
  • 2 cups ground flaxseeds
  • 2 cups ground sunflower seeds
  • 3/4 cup coconut aminos or Nama Shoyu (*not gluten free)
  • 3/4 cups cold pressed extra virgin olive oil
  1. Peel and halve the onions.
  2. In a food processor, cut the onions using the slicing blade.
  3. Transfer the cut onions to a mixing bowl, add the remaining ingredients, and mix until the ingredients are thoroughly combined.
  4. Evenly spread 1 ½ cups of the mixture on an Excalibur dehydrator tray lined with a Teflex sheet.
  5. Dehydrate at 100° for 36 hours, removing the Teflex sheet after the first 24 hours.
  6. Once dehydrated, cut into 9 equal pieces (2 cuts horizontally, 2 cuts vertically).
  7. Makes about 2 ½ trays

Piggy Cooking Tips

Avoid sticky garlic

When chopping garlic into fine pieces, it can leave you in a sticky situation. The garlic sticks to your knife, your fingers, and the board. To avoid this – simply rub a tiny drop of olive oil onto the blade of your knife and a few drops onto the garlic cloves. The oil coats the garlic and stops it from sticking.

Living in Santa Monica, I frequent Euphoria Loves Rawvolution and I am really excited to make this onion bread. Matt and his recipes are wonderful. I admire the philosophy of his company.
