Raw Judita’s Orange Cranberry Scones

It is DAY 12 of “Raw Food Recipes with Excalibur” and the gorgeous Raw Judita joins our Dehydrator Giveaway Celebration. This stunning red-haired beauty has brought a plate of her delicious raw vegan orange and cranberry scones to the party, and you do not want to miss these delectable treats!

Judita says, “Orange cranberry is one of my absolute favourite flavour combinations and unbelievably delicious in this moist and chewy oatmeal based recipe. I enjoy these for breakfast as well as for dessert, paired with a warm cup of herbal tea.” I say, “These scones are scrumptious, and take them any way you can get them! YUMMO!”

Just a note about the oats: oats have long been known for being an excellent source of soluble fiber which is great for the digestion, balancing blood sugar and for lowering cholesterol. They are also high in protein; rich in immune boosting minerals like selenium and zinc; and a great source of bone-building calcium, phosphorus and magnesium. Commercial oats can contain small amount of gluten due to cross contamination. For those of you with a gluten sensitivity, be sure to purchase gluten free oats, or order certified gluten free oat groats from glutenfreeoats.com

These scones are just one of the many RAWMAZING recipes “Raw Judita” has in her repertoire. Raw Judita likes to think of herself as “Healthy Judita.” After suffering from depression, bad moods, bad skin, arthritis, and chronic symptoms, Judiita regained her health and vitality with a raw plant-based diet, and enjoyed a clarity and creativity she had not previously experienced.

Judita then went on to become a Certified Holistic Health Counselor from the Institute for Integrative Nutrition, and a Raw Food Chef and Nutrition Educator from the Living Light Culinary Institute. She now gives lectures and coaches clients all around the country to inspire other people to become healthier, more energetic, radiant, and vibrant with the power of live whole foods.

Raw Judita’s Orange Cranberry Scones

  • 2 cups oat groats (1 1/2 cups dry), soaked 8-12 hours or overnight
  • 3/4 cup pitted and chopped soft medjool dates
  • 1 tsp grated orange zest or 1 tsp orange extract
  • 1/2 cup cranberries
  • 1/2 cup chopped walnuts
  1. Place the well drained oats into your food processor and process until the oats break down and begin to stick. Scrape down sides with a spatula if needed.
  2. Add the dates and orange zest, and process until the mixture balls up into a dough.
  3. Transfer to a mixing bowl and combine the cranberries and walnuts by hand.
  4. Place mixture in the centre of a non stick surface and press the dough into a  3/4” to 1” high round shape. A rolling pin is helpful for this.
  5. Cut round into 8 wedges and transfer to a mesh Excalibur dehydrator tray.
  6. Dehydrate at 110 degrees for about 5-6 hours. If you like a moister scone take them out after 5 hours.
  7. These will keep for 5-7 days in an airtight container in the refrigerator or one month in the freezer. 
  8. Makes 8 servings
  9. Soak time: 8-12 hours
  10. Prep time: 10 minutes
  11. Drying time: 7 hours

Tip: How to prevent sticking when chopping dried fruits

Chopping dried fruits such as dates, apricots and raisins can be a sticky mess. The fruit sticks to the knife, the board and your fingers. To get yourself out of a sticky situation just rub a tiny drop of cold pressed oil onto the blade of your knife. The fruit will slide right off after cutting.

I agree the orange cranberry combo is delicious, can’t wait to try these.  They may only last as long as the Prep time - 10 minutes!

What do you do if you don’t have a dehydrator?

Mary,
I imagine you could make these on the very lowest warm setting of your oven. That typically works for most raw cookie recipes.

Has anyone tried making these in the oven? If so please advise how long you left them in for and the result. Thanks

Karen, I haven’t tried this, but you could try using the lowest setting of your oven. You will need to keep checking them every half hour.
