Raw Vegan Avocado Mousse Pudding
18OK, so here I go again! Yapping on again about my love of avocados! If you really hate avocados, then you might want to read another recipe blog. Because I am not going to stop! When we had people over for our taco buffet feast the other night, I whipped up this raw avocado pudding for dessert, with the left over avocados that were going to be past their peak in the morning! The results were pretty good. Well, there certainly wasn’t anything left in the trough. So I am guessing it was OK.
My inspiration for this vegan avocado mousse was this famous raw avocado pudding in a macrobiotic restaurant I frequented on when I was touring with a show in Portugal many years ago. That raw avocado pudding still calls out to me in my sleep. Dear pudding, I will return to you some day! The avocado gods can’t keep us apart forever. I must shamefully admit, that I didn’t quite get there with this vegan avocado mousse. This recipe is really tasty, but it still isn't as good as their avocado pudding. What the hell do they put in that vegan mousse? Cocaine?
But don't let me discourage you from making this vegan avocado mousse. It is still pretty delicious, and worth sharing with you today. Avocados make such a fantastic base for vegan desserts. Along with raw cashews, it is pretty hard to go past them when whipping up a quick vegan mousse or raw pudding. I suppose the question is, how avocadoee (is that a word?) do you want your avocado pudding to be? Well you know me, the answer is always going to be, "the more avocadoee (I know mum – you are dying) the better!"
This week I opted to go very “avocadoee”, probably to prove a point to a few skeptical dinner guests. Yes, you know who you are! I think this vegan avocado mousse is absolutely scrumptious. But if you are not a big fan of avocado you can use this base of avocados, bananas, water, vanilla and sweetener for all kinds of flavourful inspiration. This recipe lends itself to an array of vegan embellishments. I am partial to throwing in some cocoa powder, nuts and coconut. I have also made a rich berry pudding which absolutely soared! This is one of those gluten and dairy free recipes that works with most flavour combinations.
If you are looking for quick easy allergy free recipes this recipe is fantastic. This raw avocado mousse is vegan, gluten free, dairy free, egg free, nut free, soy free and refined sugar free. It also happens to be one of the easiest tastiest Vitamix recipes out there. I know, any opportunity to plug my favourite blender. Trust me, "Be Bold and “Avo go" and you won't be sorry. This vegan avocado mousse is piggilicious.

Piggy Cooking Tips
select perfect avocados
A ripe avocado will have a dark brown/green skin that yields just a little under pressure. Place your thumb on the top of the avocado and it should have a slight give. Really soft avocados have an unpalatable flavour and the brown discolouration indicates the presence of free radicals. I always buy my avocados rock hard so that I can control the ripening process on my bench top. Then I can check them every day and get them “just right”. I buy rock hard avocados every day and have a rotation so that I have at least one that is perfect for consumption every day! To slow down the ripening process place the avocados in the fridge once they are ripe and they should keep for a few days.
