Pineapple Ginger Sorbet

It is DAY 26 of "I LOVE Vitamix" month, and we are into the last week of our fabulous Vitamix 5200 giveaway. 

Today we are celebrating with some tropical magic with Vitamix Recipe #26: Raw Vegan Pineapple Ginger Sorbet. I LOVE making raw ice cream in my Vitamix, and it doesn't get much easier than this recipe. Just throw all of the ingredients in your high speed blender and devour. If you want the consistency to be a bit harder, place in the freezer for a few hours and scoop out like conventional sorbet. 

This recipe is really simple, but it is absolutely delicious. 

Pineapple Ginger Sorbet

  • 4 cups frozen pineapple
  • 1 cup chopped pitted dates
  • 1/2 cup coconut water
  • 1 tsp grated fresh ginger
  1. Place the coconut water your Vitamix then the dates and ginger, and then the pineapple.
  2. Pace the blender on high and use the tamper to guide the ingredients through the blades.
  3. Blend until peaks form - just a minute. 
  4. Enjoy immediately like frozen yoghurt. 
  5. Or place in the freezer for a few hours and scoop out like conventional sorbet.
  6. Serve 4-6

Tip: the best way to grate fresh ginger

Nothing beats a porcelain ginger grater! Just rub the whole ginger piece unpeeled over the grater and you have it ready in literally seconds, Procelain ginger graters are as cheap and chips and so easy to clean. Just place the whole grater under running water and everything runs off. That little piece of kitchen gadget mastery would be in my top ten favourite cooking tools. I have had mine for years and travel everywhere with it. Thankyou Tony!

Oh, Hell yeah!  I’ve got a pineapple sitting on the counter waiting to ripen a bit more and some thai coconuts in the fridge with all the other ingredients.  Ripen pineapple, ripen!  I want to make this one!  Can’t wait to try it.  I just made your cream of spinach soup for dinner tonight- which is FABULOUS!  So creamy, yummy and full of flavor.  Deep and rich tones.  Loving the blended soups on chilly nights.  A squealing winner!

Only 4 ingredients??? Love it! Just what an Aussie summer needs. Will be happy to make this one for the kids this weekend…only challenge is keeping my husband away from it before the kids can get to it ;-)
