Today I wanted to share with you one of my favourite decadent smoothies that I enjoy as a treat whenever I need a bit of a lift! I will say right out of the chute that this smoothie is very rich, and is all about the fun! I don't drink this every day of the week. It is a treat. Because I have struggled with candida issues in the past, I really limit my intake of sugar, and following alkaline principles means that I don't eat any fruit. I don't know about you, but the combination of strawberries and cream NEVER gets old for me! If I had one hour to live, I might just spend it in a vat of strawberries and raw vegan vanilla cashew cream. This smoothie does every delectable mouthful of that dream justice, striking just the right balance to create a taste sensation that is just like a spoonful of strawberries and cream. YUMMMMO!
As I said, this smoothie is RICH and DECADENT! Feel free to start with just a couple of dates or no dates if you want a milder flavour. But for my money, it is BLENDSATIONAL just as it is. ENJOY! This smoothie will blow your head off. It is that good! Oinkedy Oink!
Raw Vegan Strawberry and Cream Smoothie
- 2 cups frozen strawberries
- 1 1/2 cups of coconut water or filtered water
- 1/2 cup raw cashews
- 1/4 cup chopped pitted dates (about 3-4 dates - less if you don't want it as sweet)
- 1 tsp non alcoholic vanilla extract or 1/2 tsp regular extract
- pinch of Celtic sea salt or Himalayan salt
- Place the coconut water, cashews and dates in your high speed blender (I use a Vitamix) and puree on high until smooth and creamy.
- Now add the vanilla extract, salt and strawberries.
- Blend on high until it is rich and creamy. YUMMO!
- Serves 2.

“Raw” cashews are widely available in pre-packaged bags as well as bulk bins. Always purchase from a supplier where there is a high turnover to ensure freshness and quality. Look for plump cashews that are uniform in colour. Avoid the limp and shrivelled ones. Cashews should smell nutty and sweet. If they have a sharp or bitter smell they have gone rancid. To preserve the precious oils, store cashews in a sealed glass jar in the fridge for up to six months. Always soak cashews before using to remove the enzyme inhibitors and make them more digestible.
