"The Simple Things in Life are the Best." That pretty much sums up how I feel about this raw vegan sweet nectarine smoothie. I almost didn't post this little seasonal Summer gem as I thought it was too ludicrously easy to be considered a recipe. But then I thought, "It's nectarine season - let's celebrate" and decided this delicious velvety green smoothie was worth a post, not only for it's minimal ingredients and fresh flavour, but the incredible creamy texture!

I think nectarines come second only to mangoes for their "solo ability to cream up a green smoothie." Nectarines have a natural velvety smooth texture, making them a fantastic addition to green smoothies. You don't need to add bananas, avocado or raw nuts. They are also naturally super sweet which really cuts through the grittiness of some greens, and if you get beautiful sweet nectarines the results are just magic! It is like "Summer stone fruit trees in a glass." 

The thing I love the most about this nectarine smoothie is that it is ALL about the nectarines! This smoothie really relies on just that one ingredient. You can use any other mild tasting green such as romaine lettuce instead of spinach, and you can use filtered water instead of coconut water. You just can't compromise on the quality of your nectarines! Use nectarines in season that are ripe, sweet, and juicy.

Raw Vegan Sweet Nectarine Green Smoothie

  • 3 or 4 cups organic spinach (*see note in post)
  • 3 cups ripe UNpeeled nectarines (about 4 medium nectarines)
  • 2 cups ice cubes or more depending on your preference
  • 1 cup raw coconut water 
  • pinch of Celtic sea salt or Himalayan salt
  1. Place all the ingredients in your blender (I use a Vitamix) and puree until smooth and creamy.
  2. Tweak flavours to taste – you might want to add a few dates or stevia to heighten the nectarine flavour depending on the ripeness of your fresh fruit.
  3. Makes two 16-ounce glasses

The best tasting spinach has vibrant bright green leaves with crisp stems. This spinach also has the highest nutritional value. Purchase organic wherever possible. Avoid wilted leaves that have yellow discolouring, bruising, or a slimy coating. This spinach has passed its prime and should not be consumed.
