Raw Virgin “Better-Than-Tequila” Margarita Mocktail
16Today I have to share with you one of my favourite websites for raw foods recipes. I first connected with the ladies from Uncooking 101 (what a great name) earlier this year when they wrote me a lovely email telling me how much they loved my vegetarian recipe blog and how they felt it had "something for everyone". I was really flattered as a fellow food blogger, but humbled once I acquainted myself with their incredible work. So let we acquaint all of you.
Uncooking101 is a raw recipe blog that is the brainchild of founder, head chef and CEO, Eva Rawposa and her delightful sidekick, Venita Hale. Eva is a raw chef and vegan health educator, who is passionate about sharing her knowledge about a eating raw foods after noticing such a dramatic improvement in her health after she made the switch to a raw foods diet. Determined to create a place where people could come together, learn and share their experiences with raw foods, she created her raw recipe blog "Uncooking 101" in 2007, which is now an amazing supportive accessible resource for those of us passionate about vegan recipes and raw foods.
Eva also offers private raw food coaching, as well as fun-filled group classes, retreats, and other events in Martha's Vineyard, Jacksonville Florida, and Sao Paulo Brazil. If you are looking for a healthy vacation with a difference, check out Eva's Raw Bed and Breakfast in Martha's Vineyard. What a s'blended weekend that would be. I am actually planning a trip myself later this year. But if you aren't lucky enough to meet Eva in person, the next best thing is absorbing yourself in her wonderful raw recipes website. There are a ton of delectable easy raw recipes for all occasions. There are also informative articles from: how to make your own rejuvelac, sprouts and raw ice-cream; to tips on using the pulp from juicing, and eating raw on a budget. I gotta tell you, I have a piggy girl crush on these two gorgeous food bloggers. They are passionate, generous, driven, and really really talented. I was thrilled when they asked me to be a contributing chef on their site. Eva always writes such heart-felt thoughtful introductions to all the guests. There are so many amazing raw recipes and vegan recipes to choose from.
I am excited to begin our "raw recipe swap week" where Uncooking 101 will feature some of my favourite raw vegan recipes, and I will feature some of Eva's inspired raw foods creations. One of my favourite raw recipes is Eva's Raw Virgin "Better-Than_Tequlia" Margarita, which I just HAD to share with you. This zesty frozen mocktail is one of the best virgin margaritas I have ever tasted! It is SO refreshing on a hot Summer's day. What I love about this quick easy drink is that it is just a simple blend of fruit with no added sweetener, and is gluten free, dairy free, egg free, nut free and soy free. Perfect for anyone looking for allergy free recipes! Anyone can enjoy this. The secret ingredient that makes this raw drink so special is the dash of cayenne pepper which hits the back of your throat with a bite that balances out the sweetness and gives this s'blended mocktail a special zing. Serve these virgin margaritas in martini glasses with salted rims and you have an incredible sweet and salty vegan drink that anyone can enjoy.
Trust me, this raw recipe is a crowd pleaser, and a fantastic healthy recipe for that outdoor pool party or BBQ. I will feature another one of my uncooking 101 favourites later in the week. Raw Virgin “Better-Than-Tequila” Margarita Mocktail
- 1 1/2 cups pineapple
- 2 whole fresh limes peeled and quartered
- 2 nectarines roughly cut up
- 1 frozen banana
- dash of cayenne pepper
- pinch of Celtic sea salt or Himalayan salt
- 1 cup ice or more for desired consistency
- 1/2 cup filtered water
- Throw all ingredients in your blender (I use a Vitamix) and puree until smooth.
- Add in ice and water for desired consistency.
- Serve in cocktail glasses with salted rims if desired.
- Serves about 4.

Piggy Cooking Tips
the best way to clean your blender
After blending up something sticky, gooey or smelly, just place a few drops of soap in the carriage with some warm water and blend on high until all of the congealed food slips away from the blades and sides. Then repeat this process. Then rinse with water and presto! Clean carriage.
If you have smells or stains repeat this process with some bicarbonate of soda or lemon juice and water.
