So, it is only fitting that we wrap up our celebration in style with these SENSATIONAL gluten free peanut butter glazed chocolate midnight doughnuts created by the incomparable Silvana Nardone from Silvana's Kitchen. These doughnuts are rich and DELICIOUS. I had never made doughnuts before, and Scott and I had SO much fun! Silvana will be featuring these babies in the May/June issue of Easy Eats magazine. Silvana is a culinary goddess. She has had a long and very impressive career in the culinary world. She started her publishing career at seventeen as an intern for American Express Custom Publishing. As a writer, editor, cooking instructor and food consultant, she coauthored Saveur Cooks Authentic Italian. She was also an editor at Food & Wine magazine before opening her successful Italian bakery, Fanciulla. Silvana is very well known for her many years as the founding editor-in-chief of Every Day With Rachael Ray Magazine, where she was also the “No-Recipe Zone” and “Sweet Spot” columnist, and was honored with the magazine industry’s top awards. But Silvana's pride and joy is her gluten free cookbook, Cooking for Isaiah: Gluten-Free & Dairy-Free Recipes for Easy, Delicious Meals, sharing recipes she made with her son.

Currently, Silvana is the editor-in-chief of the fabulous gluten free online magazine Easy Eats, as well as writing the Healthy Eats blog for the Food Network, her own blog, Silvana's Kitchen, not to mention many engagements as food lifestyle expert, writer, recipe developer, and motivational speaker. She also has many other exciting projects yet to be announced. Silvana has appeared on countless TV shows including: ABC’s Good Morning America, NBC’s Weekend Today, CBS’s News This Morning, ABC’s Eyewitness News This Morning and the Food Network’s Roker on the Road. She has also been featured in The New York Times, The Washington Post, New York, TimeOut New York, The Associated Press, and on many websites, including AOL Health, iVillageFood, Saveur.com and Babble. 

Whilst this is all extremely impressive, what I love the most about Silvana and her website is the love she shows for her family and friends, as well as her passion for good food and stories. I have immense admiration and respect for her uncompromising integrity. Throughout her professional journey, with all of her successes, she has remained authentic to who she is, and keeps her family as her number one priority. First and foremost, she is "a mom, a wife, a friend." When we had dinner together after Nourished a few weeks ago, she opened up about her trips to Italy with her brother, and her passion for Italian cooking and writing. I can't wait until she finally publishes another Italian cookbook with some of her family's legacy recipes accompanied with the stories she told me. 

Silvana celebrates this love of kinship and story on her blog, one recipe at a time, with the innate understanding that the best conversations and memories involve enjoying a meal with the people you love. For her, it is her husband Stephen (a professional photographer who took the amazing photo of today's recipe) and their two beautiful children. After her son, Isaiah, was diagnosed with gluten intolerance, she changed the way the family ate, and she shares all of her personal knowledge and memories of gluten free living with us. Trust me, every time you "batter up" with her, you will be warmed with stories about her family, and wishing you were in Silvana's Kitchen.

Silvana Nardone’s Gluten Free Peanut Butter Glazed Chocolate Doughnuts

  • for the doughnuts:
  • 1½ cups Silvana’s Gluten-Free All-Purpose Flour Blend
  • 1½ cups boiling water
  • 1 cup sugar
  • ¾ cup cocoa powder
  • 1/3 cup vegetable oil
  • 2 large eggs, at room temperature
  • 1 Tbsp pure vanilla extract
  • 1½ tsp gluten free baking powder
  • 1 tsp baking soda
  • ¾ tsp Celtic sea salt
  • for the glaze:
  • ½ cup peanut butter
  • ½ cup confectioners’ sugar
  • ¼ cup vegan buttery spread
  • ¼ cup brown rice syrup
  • toppings:
  • 1 cup salted roasted peanuts, chopped, for sprinkling
  1. To make the doughnuts:
  2. Preheat the oven to 180 / 350º.
  3. Grease two nonstick 6-doughnut baking pans with cooking spray.
  4. In your stand mixer, whisk together the cocoa powder and boiling water; let cool completely.
  5. Then whisk in the eggs, oil and vanilla.
  6. In a large bowl, whisk together the flour blend, baking powder, baking soda, salt and sugar.
  7. Slowly combine the wet and dry ingredients until just combined.
  8. Fill the prepared pans with about ¼ cup batter in each doughnut mold.
  9. Bake until a toothpick inserted in the center comes out clean – about 15 to 18 minutes.
  10. Meanwhile, to make the glaze:
  11. In a small saucepan, melt together the peanut butter, butter, confectioners’ sugar and rice syrup over medium heat, stirring until smooth.
  12. Dip the doughnuts into the glaze and top with crushed peanuts. YUMMO!
  13. Makes 12 doughnuts.
  14. Prep Time: 12 minutes. Bake Time: 18 minutes

Tips!

Easily Remove Cakes from tins

If you leave a cake too long in a greased tin, it can be difficult to remove. A really easy way to ensure a cake slides right out of a greased tin is to run the bottom of the tin over a very low flame on the stove top. This will melt the fat that was used to initially grease the tin and the cake will slide right out.

Oh lordy those look amazing. It’s days like today, when I am very, very glad I haven’t been able to find a stainless steel donut pan. Which is why I pull out my mini muffin tin. :-)
I wonder if my husband ate all the peanut butter? Thanks for another recipe and a wonderful month.

These look absolutely divine and I’d be on it in a heartbeat if I had the ingredients! Not to be a party pooper, but I was looking at the nutritional values of the flour blend. Is there a way to bring down the calorie count? I’m assuming it’s from the white rice flour and potato starch?
