I wanted to share some amazing holiday dehydrator recipes over the last month. But, I got so caught up in commitments for my book that I just didn’t get around to creating any new recipes.

My friend Stephanie from Recipe Renovator came to my rescue with her incredible Stuffed Raw Figs with Walnuts, Cardamom, and Pomegranate Molasses. These simple little treats are so delicious and easy that I had to share them.

You can whip these delectable offerings with just four ingredients, and they look gorgeous on the holiday table. They are also loaded with nutrients and fiber, and have no added sugar. For those of you without dehydrators, there are instructions for quickly making these in a conventional oven under the recipe.

When most people think of dehydrators they think of jerky, fruit leathers, crackers, and kale chips. But, you can use your dehydrator to soften and gently heat food and fuse flavors as well.

Delicious Stuffed Holiday Figs

Makes 24 figs15 MINS
  1. Wash the figs and let them dry.
  2. Finely chop the walnuts.
  3. Crush the green cardamom pods to remove the black seeds, and grind them in a spice grinder, with a mortar and pestle, or with a rolling pin.
  4. Mix the walnuts with the cardamom and the molasses. It should be clumpy, not runny.
  5. Trim off the stem of each fig, then cut an X in the top, about 3/4 of the way into each fig. Poke your thumb inside, turning the fig while squishing the inside a bit, to create a cavity.
  6. Fill each fig with the nut mixture, and top with one extra larger piece of walnut sticking out a little.
  7. Place cut-side-up in the dehydrator set at 115F/45C for 10-12 hours.
  8. Serve warm out of the dehydrator or chilled.

*If you do not have a dehydrator, bake at 325F/165C/gas mark 3 for about 10 minutes until juicy and warm. You can substitute honey or maple syrup for the pomegranate molasses. But it's totally worth a trip to the Middle Eastern market to get pomegranate molasses for the rich deep flavor.
