I absolutely love cooking with my friend Kris. Not only is she one of my dearest friends and amongst the most generous people I know; she is a phenomenal vegetarian cook. Kris and I met when we were in a play together for Ranters Theatre over 13 years ago, and we have been breaking gluten free bread with love ever since. I am allergic to fruit cakes. Thankfully it is only the human variety that I find a bit hard to digest. But in the kitchen, mixing up a gluten free fruit cake always seems to bring out the romantic, old-fashioned side of me. The Persian Omelette recipe was so fantastic, that I decided to adapt another easy healthy recipe from my Healing Foods book, and this Chocolate Prune Cake is worthy of a mention. This gluten-free chocolate cake recipe is beautifully moist, and has a rich dark colour. Not to mention, a fabulous taste. I love a good “loaf-style” gluten free cake that strikes a satisfying balance between savoury and sweet, and still feels decadent enough to hit the spot when you want a treat with a beautiful cup of tea.
