Piggies, ONE more sleep until I pick up my mum and dad from the airport and I can start cooking up a storm with my mother. I have already started trialing recipes to share with her. My mother is an AMAZING baker, so I typically save my Christmas baking to do with her, so that I can benefit from her years of experience. She is also a shortbread aficianado. Piggies! I am SO excited to share this scrumptious gluten free vegan mantecado cookie recipe from November's Pig Of The Month, Magali Pès Schmid. Read Magali's fascinating journey with whole foods. She is one of my favourites readers, and an unending source of inspiration to me. She is an incredible self-taught cook who is always developing delectable snout worthy recipes! These gluten free vegan almond lemon and cinnamon cookies are absolutely delicious. Best of all, they are SUPER easy! Piggies! It is cranberry season and I could not be happier! I admit to having performed my signature piggy dance of joy with reckless abandon in the middle of the farmer's market on the weekend whilst salivating over all of the plump delicious fresh cranberries on offer.
