Piggies! As this is Memorial Day, I thought I would share one of my favourite quick easy desserts that I am serving up today. This nifty little idea looks impressive, and turns the simple into the sublime in minutes. After all, who doesn't enjoy a delicious ice cream sundae? This is a creative way to serve them. I freeze mine in cupcake liners sitting in cold muffin tins, as I've found this yields the best results. But you could also roll the ice cream, freeze it, and serve it straight onto a plate with some couli, or arrange them in cocktail glasses with some chocolate sauce. YUM! I don’t know about you, but I grew up with SodaStream. When I was growing up in Australia, commercial soda was reserved for guests and special occasions. My mother was very strict about healthy eating, and even natural soda was a treat. But whenever we were allowed to indulge, we made our own homemade sodas using fresh lemon, lime, and orange juice. It was a sad day, when we packed up the SodaStream! It, along with many of my childhood possessions, were boxed up and put in storage when we moved to Singapore in the late 80’s.  We never found the SodaStream when we moved back to Australia more than 12 years later. Piggies, I cannot believe Christmas is on Sunday! I am like a child opening up an advent calender counting down the days until I can open the big prize at the end. For me, that would be a wonderful day with my mum, dad, family and friends. I am so grateful to have my lovely parents here for a whole month! My mum and I have already been cooking up a storm. Yes, I will be sharing the fruits of our labour over the coming months!
