My profound apologies for feedburner's transfer meltdown that has resulted in email diarrhoea spewing many repetitive email feed outs, that I fear have not been as palatable the fifth time around as they were the first! This is a food blogger's nightmare! Those of you who have patiently clicked through would have noticed that this malfunction is due to my redesign launch. I can only liken this transfer experience (one year in the making) to a baby getting her first tooth -- a little painful as the tooth breaks through the skin, but then so satisfying when you realise what you can now sink those teeth into! I am allergic to fruit cakes. Thankfully it is only the human variety that I find a bit hard to digest. The Persian Omelette recipe was so fantastic, that I decided to adapt another easy healthy recipe from my Healing Foods book, and this Chocolate Prune Cake is worthy of a mention. This gluten-free chocolate cake recipe is beautifully moist, and has a rich dark colour. Not to mention, a fabulous taste. OK. So I couldn’t stand not having any coconut ice cream in the freezer! Last post I made some raw banana ice cream, after mournfully closing my freezer, having made the sad discovery that there was no coconut meat left! As good as that banana ice cream was, I simply had to grab a couple of cases of Young Thai Coconuts, and spent the whole afternoon smashing coconuts on the deck, and making raw vegan ice cream in various flavours. I am going to warn you straight off the bat before I proceed any further - this raw vegan banana ice cream is hard to quit eating! So if you are prepared for a few extra calories on the lips and hips and get excited by bananas, then look no further than this delectable vegan cashew ice cream, that can literally be blended up in 5 minutes.
