We end our wonderful week of Vitamix Purees and Salad Dressings today, and I have saved the VERY BEST for last! This vegan ginger beet puree might be my absolute favourite dip, puree or spread recipe in the Vitamix Recipe Center. That is really saying something because there are some incredible recipes that come out of the Vitamix test kitchen. Whilst I think my Vegan Roasted Beetroot Dip that has been featured on Chow.Com and numerous other websites is a showstopper, this Vitamix Ginger Beet Puree offers a different taste sensation for beet lovers! I don't know about you, but everybody I know LOVES guacamole, and you can make in your Vitamix in seconds! Watch my Vitamix Guacamole video for some  tips. All you do is throw all of your ingredients into the container and process on a low variable speed (around level 3) using your tamper. I like a chunky texture so I only process mine for about 5 seconds. But if you prefer a smoother texture just blend for a little longer.  This recipe is incredibly simple. It is delicious as it is, or it serves as a base for all kinds of flavourful inspiration. This recipe is really easy to adapt and make your own. Why buy store-bought nut and seed butters when you can make them so easily in your Vitamix. As I say in my Vitamix Nut Butters Video, nut and seed butters in the Vitamix are amazing because they're FRESH. You can completely control the integrity of the finished product -- the freshness of the nuts and oils, the salt and sugar levels, and the texture. Furthermore, they don't contain any additives or preservatives.  Now, I thought long and hard about whether to post this recipe, as I make no secret on this website (except for roasted hazelnuts that I have used in some cakes and spreads) that I only eat raw nuts and seeds that have been soaked and sprouted.
