Piggies, I cannot believe Christmas is on Sunday! I am like a child opening up an advent calender counting down the days until I can open the big prize at the end. Piggies, ONE more sleep until I pick up my mum and dad from the airport and I can start cooking up a storm with my mother. I have already started trialing recipes to share with her. My mother is an AMAZING baker, so I typically save my Christmas baking to do with her, so that I can benefit from her years of experience. She is also a shortbread aficianado. Piggies, today I am sharing the last of my "blender-inspired" recipes in my four month of guest posts with Recipe Relay. Piggies, I shared this delicious raw vegan orange cranberry mousse as part of my blender-inspired series for Recipe Relay last week, and I thought it only fair that I share it here. I love home made cranberry sauce with the delicious blend of sweet and spicy! Cinnamon, ginger and nutmeg just scream autumn to me, and I feel warm and comforted. I was craving those flavours the other day, so I had the idea of creating a super quick and easy spiced cranberry mousse that I could serve at holiday dinners.
