Here's another one of my favourite frozen dessert recipes from the Vitamix Recipe Center. This quick easy vegan pineapple freeze tastes just like instant tropical frozen yoghurt. It is SO easy and SO delicious. The best thing about this recipe, besides the fact that it takes literally under a minute to make, is that is utilizes three simple ingredients: pineapple, lime juice, and tofu. It also contains NO added sugar! You gotta love that :) This frozen treat is creamy and sweet with a slight tang, and stikes a gorgeous balance for a dessert that you don't have to coat-check your colon to enjoy! Piggies! As this is Memorial Day, I thought I would share one of my favourite quick easy desserts that I am serving up today. This nifty little idea looks impressive, and turns the simple into the sublime in minutes. After all, who doesn't enjoy a delicious ice cream sundae? This is a creative way to serve them. I freeze mine in cupcake liners sitting in cold muffin tins, as I've found this yields the best results. But you could also roll the ice cream, freeze it, and serve it straight onto a plate with some couli, or arrange them in cocktail glasses with some chocolate sauce. YUM!
