No self-respecting Thanksgiving dinner is complete without a truckload of delicious creamy mashed potatoes. I absolutely love them! It is a special treat for me, as I don’t eat potatoes on a daily, or even a weekly basis. Following a mostly alkaline vegan diet, and being susceptible to candida, I eat them sparingly. When I do eat potatoes, I always eat red skinned potatoes, the only potatoes allowed on the Body Ecology Diet, an anti-candida immune boosting regime that successfully helped me rid myself of years of overgrowth of yeast. We end our wonderful week of Vitamix Purees and Salad Dressings today, and I have saved the VERY BEST for last! Sauces and purees are LIFESAVERS when you are vegan and vegetarian. They are fantastic for adding delicious flavour to grains and vegetables, as well as tossing through pasta, and spreading on pizza, sandwiches, and wraps. Vitamix makes creating a variety of different blends SO easy. As I mention in my Vitamix Purees video, you can make silky smooth purees or thicker sauces with the Vitamix depending on your preference.  I enjoy super smooth blends for some recipes, and then at other times prefer some texture like with this marinara sauce, where a rustic consistency is brilliant. Piggies! I cannot believe I haven't shared my favourite homemade vegan tomato pasta sauce recipe until now. Just like the chunky vegetable soup recipe I shared last week, I make this vegetarian tomato pasta sauce recipe so often for my niece, that I forget to post it! LOL! I was actually prompted to post this by one of my favourite readers, Eric, who wrote to me for some advice about how to sneak more vegetables into his son, Tony's diet. Tony was diagnosed with cancer at the age of 5, and at age of 10, has undergone almost 30 rounds of chemotherapy and radiation.
