It is DAY 2 of "Raw Food Recipes with Excalibur", and after opening with supermodel Carol Alt we continue our celebration with another RAWKSTAR beauty, -- the inspiring co-founder and owner of Pure Food and Wine, and CEO of One Lucky Duck in NYC, Sarma Melngailis. To say this lady was building a raw foods empire would be an understatement. After ditching her life of mergers and acquisitions in corporate America, and training at the French Culinary Institute in NYC, Sarma was introduced to raw food at a chance dinner with a friend. After experimenting with, thriving on, and embracing this new lifestyle, Sarma abandoned her idea for a Morrocan eatery, and instead opened a raw foods restaurant with then partner Matthew Kenney in... Piggies! As this is Memorial Day, I thought I would share one of my favourite quick easy desserts that I am serving up today. This nifty little idea looks impressive, and turns the simple into the sublime in minutes. After all, who doesn't enjoy a delicious ice cream sundae? This is a creative way to serve them. I freeze mine in cupcake liners sitting in cold muffin tins, as I've found this yields the best results. But you could also roll the ice cream, freeze it, and serve it straight onto a plate with some couli, or arrange them in cocktail glasses with some chocolate sauce. YUM! I just like the idea of little ice cream cakes! The beauty of this recipe is that there is NO FIXED RECIPE! You can choose any ice cream you like, and roll... Keep Reading

Piggies! I have been inspired by our Gluten Free Healthy Surprise Giveaway, and so this month I am sharing some quick easy gluten free vegan snack recipes. These maple cinnamon almonds are absolutely scrumptious! Raw almonds are my favourite snack food, and if I want to make them more decadent, I cover them in different sweeteners and flavourings and dehydrate them. I made a few different kinds of sugar almonds last Christmas, and they were a huge hit. I have labelled this recipe as "raw" because the almonds are raw and dehydrated. However, strictly speaking, they are not completely raw because the maple sugar has been made from boiled maple syrup. But, there are raw foodists who eat maple syrup. So I thought I would include it in the... Keep Reading

All of Linda's wonderful recipes are gluten free, dairy free, and soy free. My kind of recipes! I LOVE any recipes made with almond flour, and Linda beautifully mixes protein and starchy flours together to create a lovely moist muffin with a gorgeous flavour. I used cranberries in my batch, but you could also use raisins. Either way, these muffins are piggilicious! I use that word deliberately, for I scoffed FOUR in one sitting. YES! I AM a pig!
