Vegan Apple Pie Smoothie

46

I promised it, and here it is. My vegan gluten free “apple pie in a glass”. I don’t really know how to do this apple smoothie justice, except to say that it is absolutely scrumdidiliumptious! For those of you with a greater articulacy, and more clarity of expression, you might be able to accurately find real words out of the dictionary that adequately prepare the palate for this taste sensation.

But today, I must resort to fictional words in fantasy movies, where anything is possible. Actually, perhaps I should take some words from the famous Mary Poppins, and tell you, that, in my opinion, this vegan smoothie is “practically perfect in every way”. And I don’t think I will be needing to eat humble pie. This apple pie smoothie is absolutely fantastic! This blend captures everything I love about a great piece of apple pie – the creamy, buttery apples with just a hint of sweetness, and cinnamon. Who doesn’t love a hot slice of steaming apple pie on a cold Winter’s night? But just like my “pumpkin pie in a glass”, this smoothie satisfies the need for a slice of apple pie, without having to bake.

Now I don’t know about you, but I don’t like sugary, sickly-sweet, syrupy apple pies. I have always thought it detracted from the natural beauty and sweetness of the apple. So, in the spirit of replicating my perfect bite of apple pie, I have held back on the sweetener in order to let these apples shine.

The raw cashew milk adds that much needed hint of a nutty pastry flavour, and the cinnamon and vanilla perfect the blend. I was craving a piece of apple pie a few months ago, and not wanting to pull out my baking plates, I remembered my pumpkin pie smoothie, and looked to my blender (my Vitamix) for inspiration. This apple pie smoothie bore some pretty sweet fruit. I quickly stewed some apples in a saucepan for 5 minutes with some filtered water. But you could easily throw in some unsweetened organic applesauce.

If you are looking for great Vitamix recipes and blender recipes you just can't beat this apple smoothie. It is vegan, gluten free, dairy free, egg free, soy free and refined sugar free. Blend up this treat and let me know, “How do you like them apples”? Now Mary – if only I could learn how to pull everything else I need out of that magic carpet bag!

Vegan Apple Pie Smoothie

Vegan Apple Pie Smoothie

  • 2 cups home made raw cashew milk
  • 1 overfilled cup of stewed organic apples or unsweetened pure organic applesauce
  • 3 Tbsp agave or 1/3 cup raw pitted dates
  • 2 tsp natural alcohol free vanilla extract or 1 tsp regular extract
  • 1/2 tsp ground cinnamon
  • pinch Celtic sea salt or Himalayan salt
  1. Throw everything in your blender (I use a Vitamix) and puree until smooth and creamy.
  2. Add in some more sweetener to taste if you like. ENJOY!
  3. Serves 2.

Piggy Cooking Tips

selecting and storing raw cashews

“Raw” cashews are widely available in pre-packaged bags as well as bulk bins. Always purchase from a supplier where there is a high turnover to ensure freshness and quality. Look for plump cashews that are uniform in colour. Avoid the limp and shrivelled ones. Cashews should smell nutty and sweet. If they have a sharp or bitter smell they have gone rancid. To preserve the precious oils, store cashews in a sealed glass jar in the fridge for up to six months. Always soak cashews before using to remove the enzyme inhibitors and make them more digestible.

Made the apple pie smoothie this morning after my run. Very thick and filling! I added spinach to the recipe to give it a little nutrient boost but the flavor was creamy apple goodness. Well done!

The Blender Girl Sep 21, 2011 at 01:52pm

Hey Shelley
The addition of spinach is a wonderful addition to this smoothie for added nutrition. I LOVE that.
I am going to make YOUR perfect blend tomorrow! Thanks for sharing :)

This smoothie is sooo yummy! And even with the freshly stewed apples it’s done in a few minutes. Plus - the steam of the apples filled my kitchen with a lovely scent :) I’m definitely gonna try adding spinach to this smoothie too.
Thank you! :-*

I love the apple pie smoothie! My weakness as a new vegan is my love for apple pie!!!

What a great blog! I lost 70 pounds through juicing (before and after photos on my blog). My blender had a big role to play in this.

Juicing also made me a vegetarian and this last month I have been eating (or drinking!!!) vegan.

Keep up the good work!

reply
The Blender Girl Nov 17, 2011 at 04:44pm

Oh That is AMAZING!
How inspiring.
I use my blender and juicer every single day and I have never felt better or had more energy.
WONDERFUL to be connected.
Those before and after pics are something!!!

OK….this has gotten me through many “I can’t have dessert tonight” situations.  I LOVE this smoothie!  I use Stevia drops instead of Agave and it is still amazing!

reply
The Blender Girl Apr 10, 2012 at 10:20am

Oh..I am so pleased you are enjoying this Christine! Yes! Stevia is a LIFESAVER with this smoothie! Love you xxx

Would love to try this, however, as I’m allergic to tree nuts, the cashews are a problem. Would there be any alternatives to using the cashew milk?

Thanks :)

reply
The Blender Girl May 01, 2012 at 01:01pm

Hey Kathryn,
This smoothie tastes delicious with rice milk or soy milk. Enjoy :)

reply
Kathryn May 02, 2012 at 10:45am

Thanks! It’s hard to find good, delicious and healthy meals that don’t have nuts sometimes.

The Blender Girl May 03, 2012 at 10:58am

Yes! I know exactly what you mean.
My niece is allergic to all nuts and we have to modify everything. Enjoy :)

I am planning to make this for breakfast tomorrow!  I never considered lecithin for thickening…thank you I will try that especially since I am one of the few people wo hate avocado in my smoothies, idc how creamy and thick it makes them I don’t like how it “breaks” and doesn’t pour.  Love your website!

The Blender Girl Jul 07, 2012 at 12:48am

Thanks Mary Jean!
I can’t wait to hear what you think.

I loved this smoothie!  I tweaked it a little, used almond milk and honey instead of cashew milk and stevia.  But it was still excellent!  This one’s a keeper!

Michele Jul 08, 2012 at 06:39pm

just tried this one this morning (we used regular milk due to tree nut allergy) and it was a hit. I used applesauce but thanks for the tip on making home made applesauce (I just got a Vitamix so I’m a novice and appreciate the helpful tips & I also didn’t know how to stew apples):) The first smoothie I tried was a berry one but being new to Vitamix I messed up & didn’t let them pulse long enough so the kids felt it was too “grainy” (frozen raspberry/blackberry) next time I’ll let it run longer. I could drink this apple one daily though!

reply
The Blender Girl Jul 09, 2012 at 12:25am

Hey Michele,
Thanks for taking the time to share your experience here and on facebook.
I am so glad you enjoyed this smoothie.
SO excited you got a Vitamix. You are going to LOVE LOVE LOVE that machine!
Yes, keep the machine on for about 30 seconds and all of your smoothies will be smooth and creamy. Don’t worry if the smoothie heats a little. Just add some ice cubes. Can’t wait to hear what else you make :)

This looks pretty tasty. I recently started drinking smoothie recipes for breakfast and it has helped me lose weight. It is pretty easy too because I make more servings and then I have a quick easy breakfast during the week.

This recipe sounds great. But I’m wondering if it will taste good warmed? I’ll try them tomorrow for my sick toddler.

reply
The Blender Girl Dec 14, 2012 at 10:50am

I haven’t tried this warm. It should be absolutely fine if you slightly warm it. Like warm apple pie. YUMMO. Hope your little one feels better soon :)
