Mac n cheeze is so popular with kids, that I get a ton of emails from parents of picker eaters requesting mac n cheeze recipes utilizing vegetables. I always recommend using cauliflower, carrots, sweet potato, butternut squash, or pumpkin.

I used cauliflower in the white mac n cheeze with mushrooms I posted a few years ago. But, that mac n cheeze isn't yellow, and doesn't pass for the traditional cheddar mac n cheeze that most American kids are used to.

To get a yellow color in your cheeze sauce, mashed steamed carrots work a treat. Carrots also add a slight sweetness to the sauce. To get a creamy texture I always use a base of vegetable broth and raw unsalted cashews; for a cheezy flavor I use a mixture of lemon juice, nutritional yeast, mustard, and salt; and for a slight smokey flavor I love adding smoked paprika. Then I like to toss the macaroni with some finely chopped broccoli florets. You could always leave these out if your kids are greenophobes.

I shared this recipe on the KitchenAid® blog to celebrate the launch of their new Pro Line® Series blender, which is now the most powerful blender on the market. Vegan Mac N Cheeze

Vegan Mac N Cheeze

Serves 4 30 MINS
  1. Bring a large pot of water to a boil with a splash of olive oil and pinch of salt. Cook the pasta according to the instructions on the package until al dente, and drain thoroughly. Transfer the pasta back to the pot, and stir through the tablespoon of olive oil. Set aside.
  2. To make the sauce, heat 1 tablespoon olive oil in a small skillet over medium heat and sauté the onions and garlic for about 5 minutes, until soft and translucent. Allow to cool slightly.
  3. Throw the broth, onion mixture, lemon juice, cashews, carrots, nutritional yeast, salt, mustard, pepper, and smoked paprika into your KitchenAid® Pro Line® Series blender and blast on high for 40 to 60 seconds, until smooth and creamy. Tweak salt, pepper, and paprika to taste.
  4. Pour the sauce onto the pasta, add the steamed broccoli, and gently stir to combine. On low heat, warm gently. Transfer to a shallow baking dish and serve family style, or portion out into bowls. Season to taste.
