Vitamix Homemade Balsamic Citrus Salad Dressing
5One of my favourite things to make in the Vitamix is homemade salad dressings. So, I couldn't feature a month of fabulous recipes from the Vitamix Recipe Center and not include some of their amazing dressing recipes. The best thing about Vitamix salad dressings? They're EASY and FRESH! You can completely control the flavour, texture, and the integrity of the finished product by choosing quality whole ingredients and using a low variable speed to emulsify ingredients.

Now, those of you who have been following me for a while would be familiar with my penchant for homemade salad dressings. Whilst I will admit that there are some wonderful organic commercial salad dressings, I just can't bring myself to hand over the cash to purchase them when they are SO EASY to make at home. I also don't know how long these pre-prepared foods have been sitting on the shelf!
Besides, I like to surprise myself with different flavours. Following a mainly raw foods diet, I eat a LOT of raw salads, and I need to make it interesting! The flavour combinations are ENDLESS. Experiment with different cold pressed oils, juices, herbs, spices, nuts, seeds, and condiments for all kinds of different taste sensations.
I love this Balsamic Citrus Dressing because it is simple, but has a zesty edge. It pairs very well with all kinds of leafy greens and raw veggies for a quick easy healthy salad. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
Vitamix Homemade Balsamic Citrus Salad Dressing
- 1/4 cup (60 ml) organic balsamic vinegar
- 3 medium oranges, peeled, halved
- 3 green onions, white part only or 1/4 cup chopped
- 2 small garlic cloves, peeled
- 2 Tbsp (25 g) sweetener of choice
- 2 Tbsp (30 ml) lime juice or 1/2 lime, peeled
- 1/8 tsp white pepper
- 1 tsp salt
- 1/2 cup (120 ml) olive oil
- Place all ingredients, except olive oil, into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn on machine and slowly increase speed to Variable 10, then to High.
- Blend for 30 seconds or until smooth.
- Reduce speed to Variable 4 and remove lid plug.
- Pour oil in a thin stream through the lid plug opening until thoroughly emulsified.
- Refrigerate in airtight container.
- Bring to room temperature and shake before serving over salad.
- Use raw agave nectar or yacon syrup if following a raw foods diet.

Piggy Cooking Tips
freeze fresh lime juice in ice cube trays for later
Fresh limes can be really expensive when they are not in season. To ensure you always have a stash of fresh lime juice, freeze juice in ice cube trays and defrost them as you need them for recipes. These ice cubes also make fantastic additions to flavour water, mocktails and smoothies.

I just made this dressing for my mom yesterday. She is a newly-converted vegan, and is really eager to start accumulating a wide repertoire of recipes.
