Vitamix Instant Vegan Peach Sherbert
2Just a short post today, as I am just about to board a plane with the incredible Frank Ferrante, the star of May I Be Frank. This incredibly inspiring story about how three men working at Cafe Gratitude in San Francisco helped Frank completely transform his life is a MUST SEE. We are heading out to spend the week in Kansas City to help our dear friend, the incomparable Dr Michelle Robin, celebrate 20 years in wellness with the launch of her new book, THE E FACTOR: ENGAGE, ENERGIZE, ENRICH. Frank and I were both interviewed as part of the book and are featured in it.
As part of the celebration, Dr Robin is throwing an amazing party this Wednesday, September 26th at the View at Briarcliff (inside the Courtyard by Marriott) 5:30 – 8:30pm, or Thursday, September 27th at Cleveland Chiropractic College, 5:30 – 8:30pm. We will be giving away a Vitamix, Breville Juicer, and Excalibur Dehydrator! I will be speaking, and also teaching two cooking classes. Frank will also be screening his film with the new Cafe Gratitude in Kansas City. If you are in the KC area, please come and join us. I would LOVE to meet you :)

So, here is the last yummy frozen treat from the Vitamix Recipe Center before we finish the week with some warm soups that will take us into the cooler weather. This Vegan Peach Soy Sherbert is SUPER EASY and SCRUMPTIOUS! Check out my Frozen Desserts Video for some quick easy tips on how to get this perfect every time. It really isn't any harder then throw it all in, tamper down, and DEVOUR!
If you are allergic to soy, you can use any vegan milk such as hemp, rice or almond milk. I like to add 1/4 cup of pitted dates to the soy milk and process before adding the other ingredients. That way, I don't have to use liquid or granulated sugars. But you can use any milk or sweetener you like with this recipe. You just cannot mess it up. It is too easy!

If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
Vitamix Instant Vegan Peach Sherbert
- 1 cup (240 ml) soy milk
- 1 pound (454 g) frozen unsweetened peach slices
- 1/4 cup (50 g) sweetener, to taste (or add dates to the milk *see note in post)
- 1/2 tsp vanilla extract
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Use the tamper to press the ingredients into the blades.
- In about 30-60 seconds, the sound of the motor will change and four mounds should form.
- Stop machine. Do not over mix or melting will occur. Serve immediately.
- If mixture has consistency of a milkshake, firm it up by slowly adding 1 cup of frozen ice cubes. Process until smooth. For recipe variation, other fruits may be substituted.

Cleaning the face of your blender
Sometimes we have a blender glitch and our concoction gets all over the base and in between all of the buttons and dials. A quick easy way to get into those hard little spots on your blender is to use a baby-soft toothbrush with a little bit of water water. The bristles will get into those hard-to-reach spots, and will not scratch the surface. Check out my No Hassle Way To Clean Your Blender video that I did as part of the Chow Tips Video Series.



In your Vegan Peach Sherbert recipe no ice cubes are mentioned. But, in step 7 you state: ‘If mixture has consistency of a milkshake, firm it up by slowly adding another cup of frozen ice cubes.’
Should there be ice cubes and how much in the original recipe.

Hi there, I am sorry for the confusion. That as a typo. There are no ice cubes in the original recipe. Because of the friction heat of the blades, if you process for too long the mixture melts. If this happens, just add in some ice cubes to bring it back to a frozen puree. Enjoy this simple recipe. It is SO good :)
