Vitamix Instant Pineapple “Yoghurt” Freeze

Here's another one of my favourite frozen dessert recipes from the Vitamix Recipe Center. This quick easy vegan pineapple freeze tastes just like instant tropical frozen yoghurt. It is SO easy and SO delicious. The best thing about this recipe, besides the fact that it takes literally under a minute to make, is that is utilizes three simple ingredients: pineapple, lime juice, and tofu. It also contains NO added sugar! You gotta love that :) This frozen treat is creamy and sweet with a slight tang, and stikes a gorgeous balance for a dessert that you don't have to coat-check your colon to enjoy! If you can't eat soy, substitute the tofu with a bit of rice milk, hemp milk, almond milk etc, or try adding in some fresh coconut meat or creamed coconut. YUMMO! 

One of the best features of the Vitamix is that you can easily make these healthy frozen treats from start to finish by blending a variety of frozen fruits with different vegan milks like soy milk, almond milk, coconut milk, rice milk, hemp milk, and oat milk, plus a little sweetener if you'd like. They taste amazing just like this. But you can make them even more interesting by adding in some spices, and other flavourings like nuts, seeds, nut butters, oats, cacao, coconut, dried fruit, seeds, for endless flavour combinations that will keep your family satisfied for years! 

I like to blend the vegan milk with some pitted dates and then add in the fruit, so I don't have to use liquid or granulated sugars. You could also use a touch of stevia to make it even healthier. But you can use any milk or sweetener that you like. It is that easy. With a lot of sweet fruits like mangos and bananas you might find you don't need any sweetener at all. The most important thing is to use the tamper. Don't be afraid to really get in there with it to help push that frozen fruit towards the blades. When the lid is firmly in place, the tamper will never hit the blades.

Vitamix Instant Pineapple “Yoghurt” Freeze

  • 1 3/4 cups (260 g) frozen pineapple
  • 3/4 cup (158 g) soft organic tofu
  • 1/2 tsp fresh lime juice
  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 30 seconds or until desired consistency is reached. Serve immediately.

Tip: the best way to clean your blender

After blending up something sticky, gooey or smelly, just place a few drops of soap in the carriage with some warm water and blend on high until all of the congealed food slips away from the blades and sides. Then repeat this process. Then rinse with water and presto! Clean carriage. 
If you have smells or stains repeat this process with some bicarbonate of soda or lemon juice and water.

In your recipe for Instant Vegan Pineapple Frozen “Yoghurt” Freeze you state that if you can’t eat soy you can substitute tofu with a bit of rice, hemp or almond milk. You say a bit. What does that mean. How much of the milk is needed. Should 3/4 of a cup be used instead of the tofu or less since it is liquid?

Sorry, I should have specified exactly how much milk. I would start with 1/4 cup and keep adding a tiny bit at a time until you get the consistency you want. You can always add liquid but it is much harder to take it out :) ENJOY!

This was ridiculously easy and a great movie treat. You could do this with any fruit couldn’t you?

Do you think this would work with full fat coconut milk (can) instead of tofu? Thanks

I think it would be delicious with coconut milk. Just add gradually, so your blend doesn’t get too thin.
