Vitamix Quick Easy Homemade Cashew Peanut Butter

Why buy store-bought nut and seed butters when you can make them so easily in your Vitamix. As I say in my Vitamix Nut Butters Video, nut and seed butters in the Vitamix are amazing because they're FRESH. You can completely control the integrity of the finished product -- the freshness of the nuts and oils, the salt and sugar levels, and the texture. Furthermore, they don't contain any additives or preservatives. 

Now, I thought long and hard about whether to post this recipe, as I make no secret on this website (except for roasted hazelnuts that I have used in some cakes and spreads) that I only eat raw nuts and seeds that have been soaked and sprouted. Read more about this on my Why Soak Grains, Nuts and Seeds page. But briefly, nuts and seeds contain anti-nutrients that act as enzyme inhibitors in our bodies, impairing their digestion. Soaking and sprouting neutralizes these agents, making them more gentle and easily absorbed by the body, and unlocking their powerful nutrients. Nuts and seeds have powerful nutrients, but very delicate oils that are incredible heat-sensitive. Nuts and seeds should be consumed raw for this reason. As soon as you heat and roast them etc the oils go rancid, producing carcinogens that are not conducive to good health.

Having said all of this, we are all on a different part of our healthy whole foods journey, and I know that many of you will want to enjoy some roasted nuts and nut butters. Let's face it, they are DELICIOUS. Life is about moderation and FUN. So, if you are going to do this, the best way to indulge is to make your own fresh roasted nut butters with organic nuts and good quality oils in your Vitamix

You can all kinds of delicious homemade nut seed butters using almonds, macadamias, peanuts, cashews, hazelnuts, walnuts sunflower seeds, pumpkin seeds, sacha inchi seeds, etc. You can grind the nuts or seeds on their own with a little bit of good quality oil, or mix them together for all kinds of delicious flavourful variations. I LOVE to make homemade almond butter with raw almonds and some hemp oil. YUM! Or try grinding up sacha inchi seeds with some sunflower seeds, raw cacao and dates. Oh WOW! Always use organic nuts and seeds and good quality cold pressed oils to make your homemade nut and seed butters.

Just a few technical things to keep in mind when making nut and seed butters. You will want to use your tamper to help guide the ingredients towards the blades. Don't be afraid to really get there. When the lid is on firmly, the tamper will never hit the blades. It only takes a minute to get the right consistency. As I explain in the Nut Butters Video, when you hear a little chugging noise, you know it's ready. You don't really want to run the machine much longer than a minute to protect it from overheating. Nut butters come out of the Vitamix warm and smelling delicious! Fresh nut butters keep in the fridge for up to two weeks. But they never last that long! 

Now, I very rarely consume peanuts. But I know peanut butter is a huge favourite. If you are going to enjoy peanut butter, the best way to do this is to make fresh homemade peanut butter in your Vitamix. I used 3 cups of unsalted roasted peanuts in that recipe and it is the best peanut butter I have ever tasted in my life! Add in some cashews to the mix like with this Peanut Cashew Butter and you have a delicious creamy homemade nut butter the whole family can enjoy.

Vitamix Quick Easy Homemade Cashew Peanut Butter

  • 1 1/2 cups (216 g) roasted, salted peanuts
  • 1 1/2 cups (205 g) roasted, salted cashews
  1. Pour nuts into the Vitamix container and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. In 1 minute, you will hear a high pitched chugging sound. Once the butter begins to flow freely through the blades, the motor sound will change from a high pitch to a low laboring sound. Stop machine.
  5. Store in an airtight container. It can also be frozen for longer storage.
  6. *If using dry roasted nuts, you may need to add a good quality oil. Begin with 3 Tbsp (30 ml) and add more if necessary.

Piggy Cooking Tips

“Raw” cashews are widely available in pre-packaged bags as well as bulk bins. Always purchase from a supplier where there is a high turnover to ensure freshness and quality. Look for plump cashews that are uniform in colour. Avoid the limp and shrivelled ones. Cashews should smell nutty and sweet. If they have a sharp or bitter smell they have gone rancid. To preserve the precious oils, store cashews in a sealed glass jar in the fridge for up to six months. Always soak cashews before using to remove the enzyme inhibitors and make them more digestible.

Oh, yum, Tess! I wish roasted nut butters didn’t taste so good while not being so good for the body. This is one of those things The Man Upstairs did to mess with us, isn’t it?  It’s like why ice cream is so delicious and yet so bad? Although, some coconut milk ice cream might be the happy medium. Wonder if you could make that with yacon syrup? Which reminds me. I need to go read your yacon syrup post. Cheers!

I’ve made peanut butter with the dry roasted peanuts.  I add about 1 to 1-1/2 tablespoon of extra lite (to not add another flavor) olive oil.  It tastes just like the peanuts from the jar…better than store bought.  I plan on making different kinds of nut butters and giving them as presents for Christmas this year.

I’ve just ordered my first Vitamix and it should be in my kitchen within a week. Excited is an understatement. I’ve been reading everything I can find on the web and am so glad I found this site.  Can’t wait to start actually making the recipes.  Love the intelligent and informed comments.  Ohh, I’m so excited.  (Been longing for a Vitamix for years)

I have been enjoying my Vitamix for a couple of months now…...green smoothies every day….I’ve just ordered my “dry mix” container and can’t wait to experiment.  I am so excited to have found this site.  YAY!!

I’ve been making my own nut and seed butters since I switched to a semi-paleo diet. Do you have any suggestions for tricks on cleaning up after making butters? My only trick so far is make it in quantities so you only have to clean up once.

John, I hear ya.
I use the special Vitamix spatula to scrape out every last bit. Then I put a couple of drops of dish soap and run the machine on high for about a minute. This cleans the carriage instantly. I then wipe it out.
For freshness and health, it really is best to make smaller quantities more often because of the delicate nature of the nut oils.

I have raw cashew pieces. Can I use that or do I need to roast them first?

You can absolutely use raw cashews! You will get a different flavour, but all of those live enzymes and nutrients. To make plain raw cashew butter, just blend 2 cups raw cashews with about 1 - 2 Tbsp grapeseed oil or mild olive oil. To mix them in with this recipe just add them to the peanuts. You may need a little bit of grapeseed oil. YUMMO!
