Sauces and purees are LIFESAVERS when you are vegan and vegetarian. They are fantastic for adding delicious flavour to grains and vegetables, as well as tossing through pasta, and spreading on pizza, sandwiches, and wraps. Vitamix makes creating a variety of different blends SO easy. As I mention in my Vitamix Purees video, you can make silky smooth purees or thicker sauces with the Vitamix depending on your preference. 

I enjoy super smooth blends for some recipes, and then at other times prefer some texture like with this marinara sauce, where a rustic consistency is brilliant. This recipe is a fantastic blank canvas for all kinds of flavourful inspiration. It is delicious as it is, or you can add in some more vegetables like shredded broccoli or zucchini, etc., to boost the nutritional profile like with my tomato pasta/pizza sauce.

You could also add in some more garlic, and add some peppers or chili for an extra kick. Either way, this quick easy marinara sauce is a winner after a long day at work. Vitamix Quick Easy Marinara Sauce

  • 1 medium carrot, halved or about 1/2 cup chopped
  • 1 Tbsp olive oil (optional)
  • 3 medium garlic cloves, peeled
  • 2 small onions, peeled, quartered or about 3/4 cup chopped
  • 2 pounds (908 g) fresh tomatoes, quartered
  • 1/2 tsp dried crushed oregano
  • 1 tsp dried crushed basil
  • 1/4 tsp ground black pepper
  • 1 bay leaf
  • additional seasoning, to taste
  1. Place all ingredients, except bay leaf, into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 5 or 6.
  4. Blend for 15 seconds or until desired consistency is reached.
  5. Pour into large saucepan. Simmer over low heat for 30 minutes. Stir occasionally.
  6. Serve with pasta or over grilled, steamed, or raw vegetables. YUMMO!

selecting great tomatoes

Tomatoes are very hard to transport when they are ripened as they get damaged very easily. So most tomatoes are picked green and then sprayed with ethylene gas (yuk) to make them red. They are also covered with a wax coating to prolong their shelf life. To avoid this “freak fruit” try to purchase organic tomatoes from local farmers that are allowed to ripen on the vine naturally. Look for tomatoes that have a rich red uniform colour and are firm and heavy. These tomatoes have the best flavour and the most lycopenes and nutritional value. If you must purchase conventional tomatoes peek the skin off before using.

I made this and it was really good. I have had a Vitamix for years and have never spent a lot of time on their website. Thanks for the reminder that they have the recipes online. Their new site look really good, and I love your videos.
