Vitamix Raw Vegan Mango Salsa

We are in the second week of our Vitamix 750 Giveaway, and we continue our celebration of the FABULOUS new Vitamix website and recipe center. This week is all about dips and spreads, and I am going to share some of my favourite super easy recipes this week.

Those of you who tried my mango salsa green smoothie a few months ago will remember my fondness for fruit salsas. I love how versatile they are -- you can pair them with sweet and savoury flavours. They make a fantastic quick easy dip with corn chips or veggie sticks, or as a side with grilled vegetables or tofu! I even enjoy this mango salsa on vegan ice cream. YUMMO! 

Making salsa in your Vitamix is SO quick and easy! Who needs knives and cutting boards? You can literally throw this Mango Salsa together in minutes, with far less clean up. As you can see from my guacamole video, even on a low variable speed the Vitamix only takes seconds to achieve a rustic chunky consistency. If you prefer a smoother consistency, just process for a little longer. I prefer chunky salsas, so I always stop the machine after a few seconds to check the consistency. You can always make it smoother, but you can't go back.

The most important thing to remember when making chunky-style dips is to keep the machine on a low variable speed and use the tamper to guide the ingredients through the blades. This gives you the most control over the texture of your blend.

If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.

Vitamix Raw Vegan Mango Salsa

  • 2 semi-ripe mangos, chunked, unpeeled
  • 1 cup (16 g) fresh cilantro
  • 1/2 medium red onion, peeled or approximately 3/4 cup chopped
  • 1 jalapeno, halved, seeded
  • 1 Tbsp fresh lime juice or lemon juice
  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 4.
  4. Blend for up to 15 seconds or until desired consistency is reached. If necessary, use the tamper to push the ingredients into the blades while processing.
  5. Season with salt (if desired) and enjoy :)

Piggy Cooking Tips

freeze fresh lime juice in ice cube trays for later

Fresh limes can be really expensive when they are not in season. To ensure you always have a stash of fresh lime juice, freeze juice in ice cube trays and defrost them as you need them for recipes. These ice cubes also make fantastic additions to flavour water, mocktails and smoothies.
