We end our wonderful week of Vitamix Purees and Salad Dressings today, and I have saved the VERY BEST for last! This vegan ginger beet puree might be my absolute favourite dip, puree or spread recipe in the Vitamix Recipe Center. That is really saying something because there are some incredible recipes that come out of the Vitamix test kitchen.

Whilst I think my Vegan Roasted Beetroot Dip that has been featured on Chow.Com and numerous other websites is a showstopper, this Vitamix Ginger Beet Puree offers a different taste sensation for beet lovers! This recipe is not to be missed. It is glorious as a dip with veggie sticks or sprouted tortilla chips, or fantastic as side dish with tofu, grilled vegetables, grains or pasta. I have also been known to scoop it out with a spoon! 

Not only is this beet puree full of delicious flavour, it is LOADED with nutrients. Beets help tone the liver, and are full of antioxidants, soluble fibre, folate, potassium, vitamin C, and tons of other essential nutrients. Ginger has powerful anti-oxidant and anti-inflammatory properties, it helps eliminate toxins, and acts as a magical immune booster. Together they form dynamic combination in this simple puree that can made in minutes in your Vitamix after your have roasted roots! 

Trust me, do NOT miss this recipe. It is tough to beet!

Vitamix Vegan Ginger Beet Puree

  • 2 3/4 pounds (1.2 kg) fresh beets, about 3 large
  • 2 Tbsp (30 ml) olive oil
  • 1/2 cup (72 g) raw almonds
  • 1 1/2 Tbsp fresh chopped ginger
  • 1 Tbsp fresh cilantro leaves
  • 1 tsp ground ginger
  • 1/8 tsp salt
  • 1/8 tsp pepper
  1. Preheat oven to 425°F (220°C).
  2. Clean and cut beets to leave 1-inch (2.5 cm) of stem. 
  3. Double wrap beets in foil and roast for 2 hours. Cool.
  4. Peel beets, trim ends and cut into quarters.
  5. Place oil, beets, almonds, fresh ginger, cilantro, ground ginger, salt and pepper into the Vitamix container in the order listed and secure lid.
  6. Select Variable 1.
  7. Switch machine to Start and slowly increase speed to Variable 8.
  8. Blend for 20 to 25 seconds, using the tamper if necessary to push the ingredients into the blades.
  9. Enjoy as a dip or side dish with vegetables, grains, or pasta. YUMMO!

Tip: the best way to grate fresh ginger

Nothing beats a porcelain ginger grater! Just rub the whole ginger piece unpeeled over the grater and you have it ready in literally seconds, Procelain ginger graters are as cheap and chips and so easy to clean. Just place the whole grater under running water and everything runs off. That little piece of kitchen gadget mastery would be in my top ten favourite cooking tools. I have had mine for years and travel everywhere with it. Thankyou Tony!
