The Blender Girl & Maura Knowles make Vegan Minty Cocoa Balls for Diabetics with Mac-N-Mo’s Morsels

Food Blogger, The Blender Girl makes quick easy gluten free vegan minty cocoa balls with Maura Knowles using her Mac N Mo's morselicious recipe mix.

Here's what you do:

You take 3/4 cup morselicious recipe mix, 1/2 cup unsweetened cocoa, 2 Tbsp lightly sweetened cocoa, 1/2 cup mashed pumpkin, 4 dates chopped with 1/2 cup warm filtered water to make a paste.1/3 cup chopped fresh mint leaves, 1/2 tsp natural mint extract.
Mix all of this together to create a batter.
Lightly oil your hands and then make little balls. Line these on a baking sheet for 8-10 minutes at 350.
To make raw vegan minty cocoa balls just roll them and put them in the dehydrator rolled in nuts or coconut.

If you want these a bit sweeter you could always add some more sweetener of your choice such as more dates, agave nectar, yacon syrup etc. But we liked them just as they were.

These minty cocoa balls are a perfect sweet snack treat for people with diabetes, heart disease and for people with food allergies.

Looks divine and I love th presentation in the martini glass. Question for Maura. My dad is a diabetic and loves scones and shortbread cookies. Doe she have any recipes for those using her mix. Thx.
