Well, the time has come! The Blender Girl cookbook launches tomorrow, and it is time to send my story and recipes out into the world so that blendaholics far and wide can enjoy these super easy recipes.

I'm so excited for my launch party tomorrow night. 250 people are coming to dance to live music and blenders swirling. I will be serving delicious food from the book. There will be a raw taco buffet with delicious pico de gallo, sour cream, and guacamole, Navitas Naturals will be making my tastes-like-ice-cream kale shake and antioxidant avenger superfood smoothie, my friends from Kevita will be serving my favorite probiotic drinks, Temple Turmeric will be serving fresh healing juices, and Almond Milk LA are bringing the milk of the gods!

My favorite produce company, Melissa's will be coming with an abundance of their top fresh produce to serve: beautiful fresh fruits and vegetables will be served with Way Better Snacks sprouted chips to dip into huge bowls of the BEST hummus on the planet from the folks Happy Monkey Hummus, and the most incredible organic salsas from Naked Infusions.

Driscoll's are bringing the most enormous amount of their best berries (I swear they grow the best organic berries on the planet), Earthbound Farm will be there, and Kippy's Ice Cream are serving their famous raw ice cream. My mouth is watering just thinking about it!

I have the most incredible swag bags to give out to everybody.

So, I'm off to get ready! Please enjoy this super easy chia pudding. This is one of go-to quick desserts if somebody comes over for dinner at the last minute or I feel like a quick treat. I love this almond version that tastes like marzipan. But you could add vanilla extract and stir in a mashed banana and a teaspoon of cinnamon, or stir through berries or other fruit. The sky is the limit. Enjoy.

Awesome Almond Chia Pudding

Serves 25 MINS
  1. Throw the almond milk, maple syrup, almond extract, and salt into your blender and blast on high for a few seconds until combined.
  2. Transfer this mixture to a glass bowl or large jar and whisk in the chia seeds until well combined. Chill in the fridge for at least 3 hours stirring occasionally to evenly distribute the chia seeds.
  3. Once chilled, stir the mixture very well again to evenly distribute the chia seeds, and then stir in the chopped almonds. Transfer the mixture to 2 serving glasses or bowls and top with chopped almonds. A sprinkle of cinnamon is delicious as well.
