I am so excited to share this vegan carrot ginger soup from the Weelicious cookbook today, because it's super easy (only six ingredients) and absolutely delicious. I love the veggie nuggets in the shape of animals, the potato pea cakes, the fried green beans, and the baked zucchini coins.

Vegan Carrot Ginger Soup

Vegan Carrot Ginger Soup

Serves 430 MINS
  1. In a medium saucepan over medium heat, warm the olive oil, and sauté the onion with a pinch of the salt for about 5 minutes until soft and translucent.
  2. Add the broth, carrots, ginger, and salt, increase the heat to high, and bring the mixture to a boil. Reduce the heat to medium-low, and simmer for 15 to 20 minutes, until the carrots are fork-tender.
  3. Transfer the soup to a blender, and blast on high for 30 to 60 seconds, until smooth and creamy.
  4. Serve with a dollop of yogurt or sour cream.
