If you're looking for a super easy allergy free holiday cookie recipe I have found one in the Weelicious Lunches cookbook. These coconut, date, banana, and sesame seed cookies are gluten free, dairy free, egg free, nut free, and soy free. Those of you who read my Carrot Ginger Soup this week will know how easy the Weelicious recipes are. Like most of Catherine's recipes, these cookies have only 4 ingredients! This recipe is literally child's play.

Catherine was inspired to create these cookies for her second cookbook after enjoying the Go Raw cookies.

There are some really cool features in this second cookbook. I love the tips for engaging all of the senses and the beautiful double-page photo spreads at the front of the book calling out fruit, vegetables, protein sources, carbohydrates, and pantry staples. There's also great suggestions for theme meals, fun themes, and lunch box combination ideas. If you follow Catherine on instagram, she posts what she is putting in the lunch box every school day.

This book is all about awesome lunch ideas. There are all kinds of fantastic tips for lunch boxes, reusable bags, cold packs, containers, and bottles. There is also a wonderful Weelicious Lunches Allergy Guide denoting which recipes in the book are gluten-free, dairy-free, egg-free, and nut-free.

Just like in the first book, in this book Catherine shares super easy recipes that can be enjoyed by kids of all ages, as well as parents. With more than 160 recipes for extraordinary meals, Catherine acknowledges the redundant nature of creating lunches for children and she provides a variety of realistic solutions to help think outside the box, and beyond the standard PB&J.

There are wonderful simple fruit and vegetable salads, soups, sandwiches, wraps, burgers, roll-ups (love the sandwich sushi), pizzas, tons of snacks and spreads, sweet treats, and an entire section on PB & J! There's also bit-sized take-away meals. I love the falafel bean patties, chocolate chip granola bars, and chai spiced almonds,

There are so many easy ideas, you could serve a different lunch box every day of the school year out of this book alone.

Gluten-Free Vegan Coconut Date Cookies

Makes 20 cookies60 MINS
  1. Preheat the oven to 275°F.
  2. Place all the ingredients in the bowl of a food processor and pulse until smooth.
  3. Using a small ice cream scoop or a 1 tablespoon measure, form the mixture into balls and place them on a parchment- or Silpat-lined baking sheet. Press down on the balls with the palm of your hand to form cookies.
  4. Bake for 45 to 50 minutes, or until golden and dry to the touch.
  5. Cool on a wire rack. They should be dry on the outside, but chewy on the inside.
  6. To freeze: After step 5, place the cookies on a baking sheet and freeze for 20 minutes. Remove, place in a ziplock bag and freeze up to 4 months.
